Notes: Inspired by a brew Kit of a similar sounding name but how I think it should have tasted. Colour, taste and smell reminiscent of autumn/fall in the countryside; cobnut/hazelnuts, hint of wood smoke, deep red/brown, warmth of alcohol. One to share with friends sat together by the fire place, or even while cooking.
Great feedback received with this beer, I would say cellar temp (8-13C/46-55F) to best appreciate the flavours, but whatever works for the drinker.
Changes for 2024 = more smoked malt , say 10% as 2% isn't noticeable as intended.
I did think the malt bill was too 'busy' but actually it all adds up and works well together. |

Notes: Fill kettle to 5.5 gal
Add salts (1g calcium chloride)
Add citric acid (3.5 - 4.0 target)
Heat to 170 degrees and pull 1/2 gal
Add dip hops and let rest
Boil remaining water for 10 minutes
At flameout add rest of the hops - Stand for 10 minutes
Chill and rack into fermentation keg - Add dip hops
Add yeast
Bio transform for 4 days

Notes: When you crush grain crush to 0.030-0.028.
When you sparge split into 2 gal batches and perform the following process. Lift gain out let drain till top of grain bed is even with water line. pour 2 gal of sparge water on top and let drain most of the way. stir grain and then dunk back into wort. Keep siring with recirculation on for 2 mins. Let bed settle for 2 mins with recirculation off then lift back out and let drain till top of grain bed is even with water line. Pour last 2 gals of sparge water on top and let drain most of the way. Squeeze bag of the last sugars.
Add Molasses 10 mins before flame out. |
