Notes: After lauter and collection of 4.25 gallons of wort, 3 cups were separated and brought to boil in SS pot of Instant Pot, on stove. Then added 25 gr Hallertau hops on bag for high pressure of 15 minutes (appx 12 PSI pressure) . This was then added to the 4.25 gals of wort to boil for 20 minutes before adding additional hops 5 minute before flame out.
Trub was withdrawn from the conical fermenter before adding yeast, ( S-189, S-23, Voss Kveik all collected from earlier ferment, made into starter with 1.050 wort)
Fermented to 1.009 S.G. in about 3 days and fined with Gelatin @ 1/2 tsp / 1/2 cup water on 1-4-2018. cold crashed and then put into purged 3 gal. keg on Saturday, 1-6-17 + 1 gallon container filled (after purge with CO2)
NOTE: Took a small sample and after checking Brix/S.G. put in pop bottle and carbonated at 15 psi and put in fridge. Later tasted... GREAT!

Notes: A nice , easy, quaff-able ale to test out my new Chugger Pump set up. I made a starter with two smack packs of nearly out-dated WY1056. Both swelled up nicely and look to be quite viable after 36 hours on the stir plate - 5 liters, cold crashed for 18 hours and decanted.
*Update: Nailed my mash temp and water volumes by adding about 1/2 gallon to account for pump and hose losses. O.G.: 1.054. |

| Notes: Water volumes were a little off. I was over on pre-boil volume and under volume after chilling. Need to spend more time on fine tuning water amounts. Used a protein rest of 131 degrees for 15 minutes to help reduce chill haze that has plagued this recipe in the past. My Post boil gravity was 1.052.Exactly what I had planned for.I used FWH on this session as apposed to usual hop regimen. Normally 2 ounces of Saaz at 60 min, 2 ounces of hallertauer at 20 min. Used two packs of US-05. Rehydrated and proofed with 1 cup of wort pulled from kettle after hot break. Yeast showed nice thick head of foam and activity. Pitched after cooling wort to 68 Degrees Fahrenheit. |

Notes: 90 minute hops are FWH.
Traditional fermentation: Start fermentation at 6℃ and allow to increase to a max of 10℃. Maintain for 5 - 8 days. Once 80% of desired attentuation is achieved start reducing temp by 0.5℃ per day until temp is 4℃. Transfer to keg with spunding valve and place in keezer for at least one month to finish. Hold until fermentation is finished. Transfer to serving keg.
Alternative fermentation: Start fermentation at 6c and allow to rise to a max of 10c. Hold at 10c until close to FG (6-8 days) and then increase to 16-20c for accelerated maturation. Hold until FG is achieved and no diacetyl is present (2-3 days) and then crash to -1c. Transfer to keg and hold at -1 for 1 week. Transfer to serving keg. |
