Notes: Tripla decocção:
1- Infusão inicia 52°C e após 20 minutos passa 1/3 da mostura para panela de decocção. Elevar a temperatura para 63°C por 5min. + 5min 72°C Depois ferver por 20 minutos. Devolve tudo pra mostura principal, para atingir a rampa de 63°C. Manter por 20min. a 63ºC
2 -Depois uma nova transferência de 1/3 do mosto para decocção a 72°C por 5min. Ferver por 20 minutos novamente e depois retornará à panela
3- Após 20 minutos em alfa-amilase, 72ºC iremos separa mais 1/3 , onde novamente permanecerá por 20 minutos fervendo. Finalizaremos o processo devolvendo o conteúdo à tina inicial para chegarmos ao mash-out e continuarmos o processo normalmente.
WUTZ opção com 2 decocções:
retirar sempre partes mais densas, com bastante grãos
Aquecer a água 58ºC
Arriar o malte, deve baixar por volta de 52º manter por 10min
Retirar uns 28 litros para primeira decocção.
Elevar a 62ºC por 15min.
Ferver por 20min. Devolver para panela principal.
Deverá atingir a temperatura de 60º. Elevar até 63ºC
Manter todo o grist por 20 a 30min nesta temperatura.
Retirar novamente uns 25 a 30 litros para segunda decocção. Ferver por 20min. Devolver a panela principal.
Deve atingir por volta de 70ºC subir para 72ºC por 20min.
Depois Mashout a 77ºC 15min
Recircular até ficar cristalino e ferver pelo menos 80min
Aqui já entram 50gr de lúpulo

Notes: Mash grains at 148°F for 30 minutes, raise to 153-155°F for 30 minutes, recirculate and then lift bag and drain 10 minutes--squeeze gently. Boil 90 minutes. Chill to 170°F, add final hops cover loosely and let sit for 15-20 minutes. Leave hop stand in and finish chilling.
Ferment high-growth phase at 54°F for 3-6 Days until Gravity is within 2-4 points of target. Raise temp to 58° for maturation, add Clearzyme at start and ferment for 7-10 days . Then Cold Condition at <39°F for 1-2 weeks before bottling. Add SilaFine at 39°F at start of conditioning . 3 weeks in bottle at 65°F to carbonate. |
