Notes: Etter utgjæring flyttes ølet til sekundær gjæring.
I sekundær tilsettes eikekuber (medium til hard toasta) som har ligget i bourbon i ca 2-3 uker.
Skal stå 2-6 måneder på sekundær til oppnåd eik og bourbon smak.
Bruk Buffalo Trace Bourbon (samme destilleri som lager fatene som orginalen er fatlagret i). Kan kjøpes både på Vinmonopolet og Systembolaget. Annen Bourbon kan brukes om ønskelig.
Flyttes så til fat og karboneres. Karboneringsmål 2.2 vol.
Kan med hel splittes i 2 der den ene får masse vanilje i sekundær.
Andre mulige varianter er med cacao nibs og eller Maple sirup.
Ønsket FG er 1.040, det antas at utgjæring vil stoppe tidligere en kalkulert av BF, pga alkohol.
Etter Boksing (Flasking) bør øl lagres i flere måneder (helst 1 år) før den er ferdig.
Tips: bruk ekstra gjærnæring for å få god utgjæring (tilsetes under fermentering gjerne over flere dager, bruk samme metode som brygging av Mjød) |
