Bottle and condition 21 days, refrigerate, and enjoy.
Hint: You will need your primary fermentation vessel for secondary since you are adding 1 Gallon of fruit nectar. The nectar adds more fermentable sugars and will boost your ABV up to 7% +-.
This brew has an excellent Mango nose and subtle peach flavor with a nice, citrus-y tang to it. Great summer beer. |

Notes: - Hoppy AF session beer. Uses the same amount of dry hops as the IPA, but minimal bittering hops.
- There is no "Session IPA" in the BJCP so I'm using a Best Bitter profile with lots of dry hops.
- Obviously not to style for a Best Bitter, I just used that profile as a template.
- First brew was a double batch with Loral in the late boil
- one keg was dry-hopped with Loral and Motueka and the other got 100% Citra.
- IBU estimate should be around 38
- dry hop with 5g/l of whatever
- 2020-5-5: everything has been coming out too bitter so I'm backing off the FWH on this a bit |

| Notes: ABV is higher due to Cointreau and Tequila (no complaints). Turned out really well! I was cautious with the spice so I added the two chopped Habaneros (which sat in wood aged tequila with pineapple) to the 2.5 gallons. It turned out spicy but really nice especially cold. Id say for my next batch I'll probably do 3 Habaneros for the whole 5 gallons to leave a little more room for the lime, salt, pineapple, etc to shine but a really awesome and unique summer beer! Hope you enjoy! |

Notes: Mashing Instructions:
Dough malt into 120 degree water. Pull 35% of grist and decoct. Decoction should rest 15 minutes at 147 degrees and boil for 20 minutes. Add decoct to main mash and let rest for 1 hour at 150 degrees. Raise temperature to 160 and mash out.
Extra Ingredients:
Invert and concentrate sugar the week before. Stir constantly and lower heat. Sugar will become thin caramel.
Water should be very hard; similar to Dortmund or Burton-on-trent. High level of Sulfates, Carbonates, and Salts
Yeast:
Wyeast 3787 and White Labs WLP 530 (both Westmalle Strains) should be added right away
Wyeast 1388 (Duvel) and White Labs 550 (Le Chouffe) should be added on day 3
Slurry from bottle of Westvleteren 8 added three weeks into fermentation when gravity falls below 1.025.
Fermentation started at 65 degrees. Temperature raised 2 degrees a day until it reached 85 degrees. Massive starters or starter beers used in all cases. |

| Notes: Ended up at about 152F for the mash which was slightly higher than desired but oh well. I had to top off the mash with 1.5q of boiling water to bring it up. The hops were very pungent and had a slight spicy smell. I got really insane attenuation with the yeast. |

Notes: Cereal Mash: Bring 1/2 of mash water to boil. Add All crushed Wheat (note the American Wheat is Raw Red Hard Wheat) and Oats to gelatinize for 15 to 30 min. Then add gelatinized wheat and oats to main Mash, target = 154F for 45 min.
Main Mash: Using 1/2 mash water, Mash crushed barley at 122F until Cereal added then 154 for 45 minutes. Add 1 lb Rice Hulls (Critical with Cereal Mash) and stir and place into Lauter Tun. Sparge and collect 12 to 12.5 Gallons. Boil til 10.5 Gallons. Add no finings. Note Add 13oz Marmalade at 5 min and 1.5oz Crushed Coriander at 1 min. In secondary added 2 Orange Zest and 0.5oz Crushed Coriander. This beer is Fantastic. Best Wit I have ever made.
