Notes: Mill the grains and mash 157°F (69°C) for 60 minutes.
Boil for 60 minutes, adding the hops, yeast nutrient, and Whirlfloc according to the schedule.
After the boil, do a whirlpool step: Stir or recirculate to create a vortex, cooling if possible to 170°F (77°C); add the whirlpool hops and allow 30 minutes to steep and settle.
Chill to 67°F (19°C), aerate the wort, and pitch the yeast. Ferment at 68°F (20°C) until the gravity has dropped to about 1.028 (7.1°P), then ferment at 72°F (22°C) until complete.
Crash and condition for at least 7 days. Package and carbonate to about 2.6 volumes CO2.
BREWER’S NOTES. For the water, you want a medium-hard profile, so add 3 g each of CaCl, CaSo4, and NaHCO3. Our target color is 44 SRM. While lautering into the kettle, we adjust as needed to maintain a pH of 5.4. The yeast nutrient addition above is typical for homebrewers, but follow manufacturer instructions. |

Soli a kyselina hned do vystírky (nyní 300g CaSO4, 100g CaCl2, 200ml kyseliny mléčné)

Studené chmelení ideálně někde mezi 3,2 - 3,7° a pak zahradit
Po studeném chmelení začít odstřelovat hned po 24-36h

Vaření 12/24
Aby mi to vyšlo na kila chmelů (vycházelo na 15hl 1,4+1,4kg Mosaic/Wai-iti), tak jsem upravil -400g na DP Wai-iti a přidal 600g na DH Mosaic. Nakonec jsem to změnil ještě celý jinak, protože je k mání Cryo chmel, tak jsem na studený dal kg+kg a lehce upravil zbytek, aby mi to vyšlo, 500g Mosaicu mi zbyde z předchozího vaření
Trošku jsem stáhnul vločky (ze 7 na 5kg)
Upravuju vodu na víc APA/IPA profil
Nějak jsem ale vůbec nekoukal na hořkost, je papírově nějak hodně vysoká (na etiketě mám 31), příště na to kouknout a upravit. Nicméně takhle jsem to asi vařil vždycky, až tou úpravou, že to leží 40min po whirlpoolu, to vyskočilo na tu vyšší hořkost, ale recept je stejnej. Podle původního receptu to bylo okolo 45 IBU, když teď nechám okolo 42, tak asi v pohodě, protože navíc upravuju vodu a ta tu hořkost lehce vytáhne.

Při posledním vaření (Panaczech, 07/2021, efficiency 76% jsem měl) to mělo před chmelovarem na 1100l 13,2°P, naředili jsme na 1250l, kdy to má cca 12-12,1°P. Po chmelovaru máme 12.7 °P , 1190l |
