Acid malt percentage is based off of desired pH drop. I used Primo brand bottled water with a reported pH of 6.3. With double milling my grains, my actual OG was 1.052. I was aiming to ferment at 90° but ended up at ~80°. AFter 24hrs of fermentation, the beer was at 1.023. ~Edited 5/12/2020 to lower Carapils %
