For Raisins:
Chop raisins and put them into mesh bag.
Place mesh bag into pitcher and at 10min left of boil, pour boiling wort into pitcher to sanitize and rehydrate the raisins.
after 5min, pour wort back into boil and place mesh bag into fermenter.
For Cocoa Nibs
Add to fermenter after primary fermentation is complete. Let condition for a week and then taste.

Notes: -Mash grains with 4.5 galons of 158 degree water. Target mash temp of 152 degrees.
-Mash for 60 minutes.
-Remove grains and sparge to a pre-boil volume of 4.5 gallons.
-Bring to a boil and add Mosaic hops. Boil for 60 minutes.
-Cool to ~80 degrees. Transfer to fermenter and aerate.
-Pitch yeast ~ 80 degrees F.
-Leave fermenter at room temperature, around 68 degrees F.
-Allow to ferment to completion. Bottle 2 weeks after initial yeast pitch.
-Condition in the bottle for at least 2 weeks and enjoy! |

I suggest the use of yeast nutrients and firm temperature control
Hold 18 deg c (Approx 65 deg f) for 7 days then raise up to 21 deg c (Approx 70 deg f) at the rate of 1 deg c per day. Fermentation is finished when you have a consistent SG for 3 days.

Mash:
1. Heat 4.5 gallons water to 150 F, cook grains for 45 mins.
2. Increase temp to 170 F let sit for 15 mins.
3. lift basket to drain, submerge, and let wort setting. repeat once.
4. sparge with the separately prepared 173 F 2.5 gallons of water for 30 minutes.
Boil: (uncovered - total boil 75 mins.)
1. Raise wort temp to 212 F.
2. Once boiling at 1 oz hops for 45 mins.
3. add 1 oz hops for 30 mins.
* Do not allow a boil over!!!
Whirlpool:
1. reduce temp to 180 F for 30 mins in a whirlpool (to aerate, no hops being added).
2. Crash temp to 64 F before added to fermentor.
Fermenting:
1. Ferment at 64 F for 6-7 days.
2. Increase temp to 69 F add 3 oz hops for 5-7 days.
3. Decrease temp to 36 F for 2 days.
Kegging:
1. Transfer to keg, set psi to 20, then quick purge to release oxygen and let come back up to pressure. Let sit for 2 days
2. Turn of gas, purge, set psi to 9-11 and check carbonation, if good let mature 5-7 more days.
