Higher abv can hold haze better
Use less flaked grist and more malted (the germination breaks down size of proteins - less likely to fall out of solution and more likely to bond and float).
Proline is important for binding to polyphenols. Mash hops are good for reducing metals earlie, which are counterproductive (heavy and will fall out later anyway, bringing along with it other pro-haze ingredients).
The longer the grain is malted the higher the proline. Use more malted than flaked (wheat and oats). to a much lower pH with acidulated malt (and add citric acid in whirlpool); adjusted water to be more than 2 to 1 Cl to SO4
Noble hops in mash
No boil hops
Add whirlfloc and yeast supplement at 15 min left in boil
After boil, chill to 160F and whirlpool hops using spider AND ADD citric acid
Ferment at 68F for first two days, then ferment at 77F temp under 12 psi
One dry hop at end of fermentation on day 7: soft cold crash to 45F for one day, dry hop and raise to around 55 degrees for two days. Hard cold crash and transfer to serving keg.
In serving keg (prior to bottling for competition) infuse with 6oz of hops in 3 quarts of hop tea water, as per David Heath video. In recipe, hop additions are reflected as "hopback" at 1% utilization.
No high krausen dry hop needed since "biotransformation" is not just isolated to high krausen. Simplify a bit. Distribute hops throughout process where they fit best.

| Notes: My own recipe based on what I had in inventory. I am going with a single hop and chose Chinook for its pine resin, spice and grapefruit notes. I thought those would pair well with the spice of the rye rather than using a fruit based hop that would probably get drowned out from the rye. According to a chart on Brewer’s Friend, a Rye IPA should be 50 to 75 IBU and a Double IPA should be 60 to 120. I adjusted the hops in the recipe and am going with a projected IPA of 80.5. I did see when I switched from American Pilsner Malt to Wyermann Pilsner malt the IBU went up to 81.11, but after multiple saves, it is back down to 80.5. I manually changed water requirements as max that I can use in my equipment is 22 liters on a sparge or grain won't fit. 22 liters strike and 9.15 sparge. Changing back to US units will change L to Qt but not change the quantity. It also changes the hops from grams back to ounces and fermentables from KG to pounds but those quantities change as well. I accidentally added the hops at 50 minutes rather than whirlpool so the IBU went up a bit. |

Verify pH of mash tun, should be around 5.4, then add Ca(OH)2 (slaked lime) to wort just prior to late addition of specialty grains in mash tun (place in 5 x 15 inch muslin bags outside of malt pipe); Mash the late addition crushed grains for 30 minutes @ 66C prior to ending mash.
Primary fermentation 7 days, closed transfer to purged keg with spunding valve set to 15 psi for secondary fermentation 7 days, then age for ≥ 30 days at ambient before carbonation @ 32 F. Optional to carbonate then bottle and age at ambient.
