Pressure ferment the half with Bavarian yeast in 5 gal Cornie keg with spunding valve after 2 days at 52F in plastic fermenter. Ferment Munich half in plastic primary and secondary fermenters not under pressure. 5/19/24- The Munich yeast version was much better than the Bavarian. Much clearer and better malty flavor.

Used 5.5 gallons of water for mash. Raised to 162 for alpha amalyse, approx 35 mins before sparging with 2.5 gallons of 180 deg water. pH at the end of the mash was 5.1. With regular czech saaz (3.5% AA) the additions were supposed to be 60, 30, 15, and 5 but moving them to 60, 10, 5, and 0 since this batch is with american saaz (6.8% AA). Approx. 91-92% efficiency is bananas.

Carapils çok ilginç, karamel ama rengi yok :D, köpük dayanımı arttırıp, fg nin artmasını sağlayacakmış. Maya 150/1500 kuru malt ile stir plate e alındı. 3de2si kovaya 3de1i de saklamaya alındı. Başlangıç suyu için 3.8 girdim, böyle daha verimli olacağı yönünde, hatta 4.18 e kadar yolu varmış. Verimlilik çok artınca hedef 1.047 yerine 1.051 de bitti, biraz yüksek kaldı.

After ~40 minutes, pull just over 1 gallon of thick mash for decoction Boil decoction for 25 minutes, stirring frequently, and add back to main mash to reach 173F Hold ~20 minutes at 173F and begin slow sparge until 6.5 gallons is reached Boil for 90 minutes, adding hops as per above. Cool brew to under 65°F Don't forget to take OG. (1.061) Add brew to 6 gallon PET carboy and pitch yeast.
