Notes: Color is a nice deep orange blossom honey color, a really nice subtle haze and a snow white foam with medium head retention.
Aroma is a really strong, sweet, exotic mix of mango, papaya, candied clementine peels and a nice grapefruit in the background, no obvious, full-frontal citrus anywhere.
Flavor is really rich in those things you already had in the aroma, nice balanced bitterness, not too obvious on the tongue, a caramelly sweetness and a nice full body, really creamy in the mouth, carbonation is spot on. Then the exotic fruits, due to the body really juicy, mixed with a slight dank, grassy tone and nice piney hints in the background. But the ethanol-warmth really starts to come through after a couple of sips and reminds you of the 8.8% ABV. |

♦ SESSION NOTES: Well it was so good on it's own I'm making it again and still not dry hoping it. This is a good one for people that aren't crazy for craft beer. (Now I would add the dry hops!)
Phantom didn't have 7.75 lbs Finland Wheat so I combined with American Wheat to a total of 6.75 lbs. Not dry hopping this beer on the first run.
Recipe from Zymurgy magazine. These are the one's I'm leaving out of this batch.
•0.75oz(21 g)Amarillo,8.5% a.a.(dry hop 5 days)
•0.75oz(21 g)Cascade,5.5% a.a.(dry hop 5 days)
•0.75oz(21 g)Centennial,10% a.a.(dry hop 5 days)
•0.75oz(21 g)Chinook, 13% a.a.(dry hop 5 days)
•0.75oz(21 g)CTZ, 14% a.a.(dry hop 5 days)
♦ STANDARD BREWING NOTES:
♫Create 8 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose. Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
WAKE UP!!!!!!
15 minutes – Add immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if fermentation tank nozzle is pointed upwards
♦ KEGGING NOTES:
Purge oxygen with CO2
Chill keg 24 hours before force carbonation.

Notes: Toast the oats @ 300 deg F, until they smell like cookies!(5-15 min) check every 5 min to be safe.
Came out GREAT! toasting of the oats took a lot longer then expected. Beer fermented like a champ finished 1.010, (Safale 04 is awesome) I would scale back on the UK Chocolate from 6oz to 4oz. Its slightly too chocolaty for my taste but I'm being hard on myself. Great beer though. Maybe next time I'll mash at 158* |

Notes: An Irish Red. Based on my family history, hailing from an Irish immigrant mother who landed in the states in mid-twentieth century.
While the family is not known for making a commercial ale the recipe its self is true to spirit from the period of the late late 1700's.
This will have a very easy smooth taste, very balanced. Not too sweet not too bitter.
I would suggest a 10 day fermentation period followed by a 2 week secondary. I bottle mine so I can share with everyone so I use 3/4 cup of table sugar boiled in 1 1/2 cup filtered water. I put that in the bottom of the bottling bucket so it gets evenly distributed in the wort with out adding in extra oxygen.
