Notes: 1. Treat 6 gallons of water with half a camden tablet.
2. Add Grain Bill to Mash Tun
3. Strike mash with 3.2 gallons of 168 deg water. Mash 60 minutes, stirring occasionally.
4. Vorlauf.
5. Add 3.3 gallons 175 deg water to sparge.
6. Bring mash to Boil, add 1oz of Hallertauer hops, and boil for 30 minutes before adding remaining hops and boiling another 30 minutes.
7. Transfer to fermenter and chill below 72 deg.
8. Aerate and add yeast nutrient, stir.
9. Pitch Yeast.
10. After a week's fermentation, smash frozen blueberries and let them come to room temperature before adding to the fermentation for another week.
11. Cold Crash the fermentation and keg it. Set the c02 to 12psi to promote carbonation for the next week or so.
12. Turn the psi down to about 5. Enjoy a pint. |

Notes: -- Pumpkin seeds (pepitas) roasted in the oven, no salt or fats added.
-- Carafa III is cold-steeped in 1qt of room temperature water over night, and strained. The grains are rinsed in an additional 1qt of room temperature water for a few hours and strained. The 2qt of cold extract are added to the boil. This creates a 'smooth' dark extract without acridness or bitterness that may clash with saison yeast (similar to a coldbrew coffee).
--Pitch yeast at 70*F and hold for 1.5 days. Ramp temp to 78*F by ~3*F per day and hold until FG; expect beer to finish dryer than 1.010 |
