Notes: Add Wyeast 3711 French Saison for a blend. Make sure to areate or similar dry yeast. If using liquid yeast pitch at least 2 packages or make a starter.
Start fermentation at 62F and increase 1F everyday until you reach 80F. Keep it there for 2 weeks until fully attenuated.
If bottling use strong bottles that can handle the higher carbonation level. |

Notes: This is a clone of BrewDog's Nine to Five Wizard, but with some changes based on availability and desired strength. The originial is said not to be hoppy enough for most palates, so the hop amount is upped slightly here. The changes to the original are listed below:
•Flavour hops upped from 2g to 5g
•Hallertau Blanc in place of Ariana
•Wheat malt increase from 2.34kg to 2.4kg
•DRC decrease from 0.12kg to 0.1kg
•Fermentation temp 20º rather than 24º |

Notes: Added about 9 ml of lactic acid to lower from 5.25-4.6
Lacto wasn't viable anymore. Added 7 ml of lactic acid instead (didn't have ph meter anymore).
Added 80g (pre-dehydrated weight) of hibiscus flowers at 10 min. 37g of purple and 45 g of white.
A big struggle to cool beer down. Unsure of yeast viability. OG was much higher than intended (1.044) |
