Notes: They call for Abbey Ale Yeast in the first fermentation. Gnome is what I had on hand.
I had not done an extract beer (not 5 gallon batch) for quite some time. I overshot my volume by a fair amount as a result.
The beer is aging on Currants and Barrel chunks.
3 month check: Mild acidity (4.85pH) and a plummy sourness. Good character. Adding Oak. |

- After 1 week fermentation: puree 4lbs overripe bananas (+6pts to gravity) with enough water to make a pourable paste. Bring mixture to 175F and let stand for 30 minutes. Add to secondary and siphon beer on top, allowing two more weeks' fermentation for the bananas.

Notes: Prepare a 2L yeast starter. Mash the two-row malt, wheat malt, and flaked oats in 5 quarts of water. Hold temperature at 154°F. for 60 minutes. Strain the wort into the brew kettle, then rinse grains with 1 gallon of water at 170°F., collecting run-off in the brew kettle. Mix in liquid malt extract and add clean water to bring boil volume to 3.5 gallons. Bring to a boil, add hops, and boil for 60 minutes. Add the orange peel and coriander in the last 10 minutes of the boil. Chill wort, top off to 5 gallons, and stir to mix and aerate. Pitch yeast and ferment at 65F for one week, then transfer to secondary for two weeks. Bottle with 5oz corn priming sugar and condition for two weeks. Optional: serve with a slice of orange. |

Notes: This is a single infusion mash. Mix the crushed malt and flaked maize with 3.6 gallons (13.6 L) of water to stabilize the mash at 151 °F (66 °C) and hold for at least 60 minutes. Sparge with 3.6 gallons (13.6 L) of 170 °F (77 °C) water adjusted to pH 5.7–6.5.
Collect 5.4 gallons (20.4 L) of wort, top up with water to 6 gallons (23 L) and conduct a 60-minute boil. Add hops per the schedule on the ingredients list. At the end of the boil, you should have 5 gallons (19 L) in your kettle.
After the boil, give your wort a stir to create a whirlpool, then let the wort settle for 30 minutes prior to chilling. Cool the wort to 50–55 °F (10–13 °C) for fermenting, aerate well and pitch your yeast. Maintain fermentation temperature between 50–55 °F (10–13 °C). After seven days, rack to secondary fermenter. When fermentation is complete and beer has cleared, bottle or keg as usual. |

Notes: Add juice of lime(s) to 3 cups of water, bring to a boil then turn off heat. Steep teabags for 7-10 mins, cool for a few mins then add to carboy. Add nutrients and juice into carboy with an aggressive pour to help aerate the juice. Add yeast, put an airlock on then place in a cool (60F-70F) environment.
Primary for one month, then rack to secondary, topping off with juice. Leave in secondary until crystal clear (usually 2-3 months or so from pitching) then bottle with 4oz priming sugar.
Takes about a month to carbonate, tastes good after 3 months, but just gets better with age. I usually start opening bottles about 5 months after pitching.
