Conversions:
576 ounces of cider = 4.5 gallons
72 ounces of concentrate = 6 12-ounce cans
Instructions:
1. Thaw the 6 cans of apple juice concentrate and pour into sanitized fermenter.
2. Pour in the 4.5 gallons of cider. *Unpasteurized and without preservatives is preferred, but if unavailable, yeast nutrient can be added to overcome the preservatives.*
3. Add yeast.
4. Let ferment until bubbling stops (approx. 2-3 weeks).
5. Fill a secondary bottling bucket with 6 MORE cans of thawed apple juice concentrate. This will act as your priming sugar, as well as extra flavoring. (I only added 5 cans to my batch because of a shopping error)
6. Rack fermented cider into bottling bucket, leaving the majority of sediment behind. Let sit overnight at room temperature.
7. Bottle. After several days, test a bottle to check carbonation levels. Refrigerate when ready.
As with all my recipes, I welcome comments, suggestions, and questions. |

Lion Real Ale is a malty, amber/brown coloured beer with a balanced harmony of Crystal and Black malt and hops to create a full-bodied, malt accented flavour. Brew with 1kg Black Rock Liquid Brewing Sugar (or 1kg of dextrose) for a crisper finish. For more body, colour and malt flavour use 1.7kg Black Rock Amber unhopped malt extract instead of sugar." |

Notes: 3 weeks in primary at around mid 70s
5 oz of dextrose for priming and it was well carbed at 2 weeks
first sampling: very hoppy nose and a nice belgiany flavor. Very drinkable
Brought this one to a party aboout 1 month after bottling and people really enjoyed it. Even non craft beer drinkers.
Have a couple bottles left that i will age and try later

Notes: This recipe is a modification from Evan Altman's "Hair of the Goat Rauchbier"
http://www.brewersfriend.com/homebrew/recipe/view/37492/hair-of-the-goat-rauchbier
From Evan's original description:
"Smoky and rich, with a blend of noble hops for balance and flavor, this is going to be a great beer to share while commiserating the season gone by and look forward to next Spring."
My own immediate modifications from the original recipe
* switched to 6lb LME Munich (instead of using 5lb Munich DME and 1lb Light DME)
* swapped hops 'domestic hallertau' with 'Hallertauer Mittelfruh'
* shop was out of Carapils - so used half the weight of a Caramel 40 as a replacement (if I recall weight correctly)
* toned down the hops a bit - basically reduced by 25% for the hops added during boil - kept dry hop amt original
This is a monster on
* steeping grains
* hops
