Notes: A good transition beer for those individuals used to easy-drinking American styles. This beer has the same bitterness levels (low) as American beers, but is an all-malt product,

- Add all steeping grains to steeping bag and steep as per your
preferred steeping method. Generally, 150*-160* F for 30
minutes.
- Remove grains, (sparge with 8 Oz. of 170*F water) bring to boil
then turn off heat, and add extract. Once extract is amply mixed,
bring back to a boil.
- Once water comes to a boil, add bittering hops and start the 60
minute clock. Follow schedule for hops addition.
- After flame out cool wort to 75*-80*F*, transfer to fermenter &
add cool/cold water to bring total volume to 4.25 gals. ( the
addition of cool water should bring Temp down to pitching Temp
68* F.
- After Fermentation.... let sit on trub for 3-5 days then bottle.
- Add 1 Sugar Fizz Drop per 12 oz bottle when bottling.
- Condition in bottle for 4-5 weeks, timing is somewhat flexiable. |

Notes: 1. Add water agents to 4 gals water in brew kettle, stir to dissolve.
2. Heat wort to 155-160 degrees.
3. Steep American Honey and Carapils malts for 30 minutes. Remove steeping grains from kettle, letting liquids naturally drain from grain bags.
4. Add DME to wort, stirring briskly to dissolve DME.
5. Add 3.5 gals water to wort; bring wort to boil; add 1 oz CTZ hops.
6. After 30 minutes boil, add maltodextrin.
7. After 35 minutes boil, add 5 oz Chinook & 5 oz Centennial fresh (wet) hops.
8. After 50 minutes boil, add yeast nutrients.
9. After 55 minutes boil, add Whirlfloc tablet, and 5 oz Chinook & 5 oz Centennial fresh (wet) hops.
10. After 60 minutes boil, turn off heat, top up wort to 7.5 gals with distilled water; whirlpool; reduce and maintain wort temp to 175 degrees; add 5 oz Chinook & 5 oz Centennial fresh (wet) hops; hop stand for 15 minutes.
11. Cool wort, transfer to fermentor, areate, and pitch yeast.
12. After krausening slows down (3-4 days after pitch), add hops to fermenter.
13. Keg when fermentation has finished.
14. Refrigerate keg for 24 hours; force carbonate at that time.

Notes: Poured the wort through the hop spider to strain pellet and whole flower hop residue. Worked well. Then poured some cold water in the spider to wash off all of the sweet sugar back into the fermenter. Surprised at how much sweetness was still on the whole hops taken from the wort.
Sparged the grains to leach the residual sugar from them too.
OG was virtually spot on...1.049 vice predicted 1.050!
Pitched hydrated yeast into 78 degF wort. |

Notes: Please note you will need:)
0.5 ounces Coriander (steep for 15 minutes at knockout)
- Bring 3 gallons of water to a boil.
- Remove from heat. Add extract and stir until thoroughly dissolved. Return to burner.
- Boil for a total of 60 minutes. Add hops per schedule above.
- Chill to less than 100 degrees.
- Strain and funnel to fermentor.
- Add tap water until desired volume or gravity is reached.
- Pitch yeast when temperature is less than 72 degress.
- When fermentation is complete, prime with corn sugar, table sugar or carbonation drops. |
