Notes: First of my own recipes - open for tweaking. Was originally intending to create a red IPA, but ended up with more bitter notes and a more brown color. I call this a "Fruit Pale Ale."
Spice - Due to my friends not enjoying spicy beer, I usually do not add the seeds in my brewing. However, in small batches, I have found the seeds of one jalapeno provide a nice undercurrent of heat.
Boil - BE SURE TO STIR. DO NOT LET THE HONEY SCORCH. I prefer a local honey, based on a hop harvest. I personally like this choice. Alternatives I have tried include lavender/hibiscus/clover honey (hops murder the subtle flavors) and a local honey from a wildflower medley - skip on the galaxy/hops and only boil the citra for 1-2 minutes if you want a bit more of the honest flavors to shine through.
Fermenting Steps
Primary - Pour UNFILTERED WORT into primary. Wait one week at least, 10 days max.
Secondary - When transferring to secondary, try and remove most of the puree - it should have settled. The addition of the mango juice and jalapeno slices should allow for fruit flavor and sugar additions for fermentation to continue.
Bottling - Bottled, stored for 2 weeks at 68-72F.
Serving - Chilled. Great with summertime seasonal meals. If made spicy, it is a great pairing during wintertime with cali-mex food. |

Difficulty in cooling down. Ended up pitching at around 70degrees. The near frozen bottles of spring, froze and split so I had to buy new and freeze.
Decent bubble just not vigorous. ON racking after 8-9 days, FG was closer to 1.020. Incredibly cloudy and full of shit (tangerine rind and hops and yeasties. Difficulty siphoning. Had to clear hose and valve several times. Tried to sterilize at every point but difficult.
Racked again after another week. Added 1 tsp gelatin to 2/3 cup water. Valve was open and I lost about a beer's worth. Crap. Added another tsp to 1/2 cup and siphoned remainder. Clarity was better, no chunks but still hazy. We'll see how gelatin works. FG is now 1.015.Taste was decent with that hint of orange but I was tainted by the thought of all that went wrong...
Learnings - Freeze water bottles but watch for over freezing. Use ice bags for the cooling of the wort still in the kettle. Quick chill at all costs (or not sterilization).

Notes: Single-Step Mash: 4 qt. 172F water, add crushed grain, stir, stabilize, and hold temp at 156F for 60'. Lauter and sparge with 2 gallons of 170F water. Top off to 3 gal total volume for wort. Add Malt Extract and Bittering hops (Perle and Saaz) and boil for a total of 60 minutes.
After 30 minutes, add flavor hops (Tattnanger) . After 50 minutes, add Irish Moss. After 60 minutes, turn off heat, add aroma Hops (Hallertauer) and steep 3-5 minutes.
Strain and sparge hops and add hot wort to sanitized fermenter with 2 gallons of cold water. Chill to 70F and aerate wort. Pitch Primary yeast (Kolsch) and fertment at 55-60F for 4-7 days. Transfer to secondary, pitch secondary yeast (Danish Lager), and lager at 50F for no less than 3 weeks.
Prime and bottle, or keg and pressurize. Condition finished beer at 60F.

Notes: Day one. Steep grains in bag in 3 gallons 150-160 degree water for 30 minutes. Raise bag up and allow to drip into kettle. Stir in DME. Cool to around 100 degrees. Add 5 ml of lactic acid and 1/2 container of goodbelly mango. Maintain around 100 degrees for 24 hours and check ph. Aim for 3.3-3.8. Bring to boil. Do full 60 minute boil, adding hops at 15 remaining minutes. Cool to 70. Transfer to fermenter via syphon. Check gravity and add appropriate amount of water to obtain OG using dilution calculator. Pitch 2 yeast packets. Put on lid and airlock. |
