Notes: Coopers liquid malt extract is prehopped to approximately 20 IBU for a 20L batch --> IBU this batch ~40.
Add ~dozen juniper berries with dryhop
The LME was very old (8 and 4 years after expiration) and had turned quite dark. 1 week into fermentation the beer is perceived as tart and a hint of soy is present. pH measures as 3.7. Color is brown.
pH adjusted to 4.2 and stored cold around 1 week. At kegging tartness is much less perceivable, but soy tones still present. |

| Notes: Our first Frog Marsh Brewing original recipe! Bought some amber LME and Wyeast 1272 and then went thru the fridge for leftovers. Checked our unused hops/grain inventory for remainder of ingredients. Looked thru our previous 23 batches and picked from things we liked. Used my homemade stir plate for the first time! Am also trying a Hop Stand after boil...love a strong hop nose! IBU contribution seems to be totally captured in Utilization Factor...chose a modest 7%. All a SWAG, but we'll see what happens! :) Here goes on Father's Day 2016! |

Notes: recipe calls for 6.5 lb DME and .75 lbs dextrose to get OG of 1.072, go down to FG of 1.011 for 8.2%abv. Called for 8 gallon bol to get 6 gallons in fermenter to get 5 gallons after hop loss bottled.
Steep grains at 165F for 30 mins in 1 gallon water, remove and rinse with hot water. Bring up to full boil volume and stir in dextrose then bring to boil.
Pitch 2 packs of yeast. Ferment at 67F, once activity slows, add first round of dry hops then after 7-9 more days, do second round. leave 5 more days then bottle. |

Historically...
- barley, supplementing with rye and/or oats;
- yarrow, bog myrtle, caraway, and other herbs were often used in its flavoring;
- traditionally brewed with minimal, if any, boil (= little hop)
- filtered through a bed of straw and juniper branches layered along the bottom of a kuurna — a carved wooden trough with a plugged bunghole at the bottom
- small amount of hops were added to either the mash or as part of the filter bed
- To build your grain bill, start with a base 80 to 90 percent either English pale ale or Pilsner malt.
Munich malt is found in many Sahti recipes and can make up from 10 to 20 percent of the remaining grain. Use rye in amounts up of 5-10% — though it can make up as much 40% — and a small percentage of malted and/or flaked wheat, or flaked oats could also be included.
- Whether you use hops or not is going to be up to your own preferences, and likely something you will want to experiment with. But remember, the bulk of the aroma and flavor in a Sahti should come from the Juniper branches and berries. When hops were used, they were added as part of the sparge filter or directly to the mash, which was sometimes boiled for a short time as a last step. In this way, hops could have imparted slight aroma and possibly a little flavor, but very little bitterness.
- Stick to low-alpha hop varieties and those of a more earthy/spicy quality. European hops are going to be recommended and should be a nice complement to the juniper. A few good varieties to choose from include:
German Noble Hops — Saaz, Tettnang, Hallertauer Mittelfrüh
English Hops — Fuggle, East Kent Goldings, Challenger
- Often, brewing water was heated with juniper branches to impart even more juniper flavors.
