Notes: Crack open a Pale Ale!
Mash grains at 155 °F for 60 minutes.
Raise mash temperature to 170 °F, hold for 5 minutes, then recirculate.
Run off wort and sparge with water hot enough to keep the grain bed around 170 °F.
Boil time is 90 minutes. Follow hopping schedule below.
Cool wort to 68 °F and pitch with California ale yeast, AKA Chico ale yeast.
Open another Pale Ale, and wait until ending gravity is 2.8 °Plato.
Bottle or keg.

Notes: After primary fermentation, rack beer into 2x 3 gallon carboys. In one, dry hop with 0.5oz each of regular and aged Sorachi Ace hops for a total of 5 days before bottling. In another, add 2x English cucumbers pureed, 5g crushed coriander, 6g fleur de sel, 3g crushed black peppercorn, and 10g dill seed. |

Notes: about the grain bill, I used Crisp malts Maris Otter extra pale malt not ‘finest’ and the OG was 1.045 not 1.049
oxidation was a little issue cause of my setup, I'm using a brew bucket, siphoning into my klastein mashtun with the priming sugar and then bottling with a cane. I'll try adding a little sodium metabisulfate to help drive out some of that oxygen next time. |

Notes: This is the base recipe from Founders for the now retired "Curmudgeon" old ale. Lots of ways to tweak it, including soaking the wood chips in rum, bourbon or whiskey. Then you can get fancy...with splitting the crystal into multiple crystal malts, or subbing maris otter for the 2-row.
Primary 9 days, then secondary with Oak.
Looked at alternative yeast - they suggested White Labs WLP060
