Notes: Mash at 63°C for 60-90 minutes, drain, and sparge to yield 19L. Transfer into the boil kettle and pasteurize at 82°C for 10 minutes.
Allow the wort to cool to 43–49°C, and pitch your Lacto culture. Kettle sour to the desired perceivable acidity level - 18-36hrs, should be sharply sour.
Boil for 15 minutes, adding hops at the start of the boil.
Chill, pitch the ale yeast and ferment at 18°C. After completing fermentation, transfer to secondary with cucamelons for 24-48 hours.
Package to 3.5 volumes of CO2. |

Notes: Interesting. Kind of tastes like it has all the components of an NEIPA but that it doesn't all come together quite right. The whirlpool hops were actually hop tea added at kegging. They are a bit strong. The beer also lacks enough maltiness despite the gravity. Stick to conventional brewing methods. |

Notes: 2 oz. fresh orange peel last 10 mins of boil.
1.5 oz. crushed coriander seeds last 5 mins. of boil.
Add another .75 oz. crushed coriander into primary 4 or 5 days.
6/22/16 - mashed 158 to 152 steady at 154. Rinsed grains with 1.7L 75 min boil. OG .046 4/12 gals a little light but we'll see added 2 ts of nutrient and aerated well. In chamber at 65degrees.
7/2 - FG .008 for 5.91% not bad at all, Very light nd fruity before kegg and carbo. |
