Brewing in Anvil 5.5 gal kettle.
-Hops & spices added to a hops bag to lessen the trub.
-Add 4 oz maltodextrin during last 10 minutes of boil with remaining hops & spices.
-Add Flavorings (Vanilla extract, Plum Flavoring, & Black Cherry Flavor) prior to adding yeast for primary fermentation.
-Primary fermentation in the kettle or 3 Gallon BrewDemon for 14 days.
For this second batch I will use Mangrove Jack's Belgian Tripel Yeast M31 (Provides a fantastic complex marriage of spice, fruity esters, phenolics and alcohol. It is also very attenuative with a high alcohol tolerance.)
I'm going to use a TILT hydrometer on this.

Notes: After fermentation transfer to secondary and add the campden tablets and potassium sorbate. Let stand for 24 hours. Transfer to keg and add maple syrup. Prior to adding syrup draw 8oz and add maple syrup to taste. Once satisfied add the appropriate amount of syrup to keg andtransfer(heat syrup to kill any bacteria).
Put pecans into blender and blend until fine. Place on baking sheet and roast at 250 degrees for 10 minutes. Remove, stir and roast for 5 minutes or until nicely roasted. Let cool, cover baking sheet with paper towels and put pecans evenly onto towels and cover with more paper towels. Place another baking sheet on top and weight down. This is to draw out oils. Repeat this at least 4 times. |

Notes: Came out OK, not brilliant. Woody, earthy but not fruity or caramel-y. Didn't actually use Wyeast 1968 but Danstar London ESB. Next version will try different yeast. |
