Notes: Cool wort to 46 °F (8 °C), then rack clear wort off cold break.
Pitch double the recommended pitch rate.
Start the culture the day before in approximately one liter of sterile, aerated wort at 46–48 °F (8–9 °C) until fermentation is noted. Pitch this cooled, aerated wort.
Let fermentation free rise to 52 °F (11 °C) until complete. Hold at 52 °F (11 °C) for two days. Cool to 42 °F (6 °C). Rack off settled yeast.
Hold at 42 °F (6 °C) for two to three weeks. Cool to 32 °F (0 °C) for a minimum of eight weeks. Bottle as normal.

8 gallons of strike water @ 153 degrees F yield mash temp of 149 degrees F for 45 minutes. After 45 minutes, the the cereal mashed corn was added to the mash for 15 minutes. Corn was harvested from UC Davis Cambell Track in fall of 2020.
End of mash pH = 5.43 (not calibrated). Computer says a pH of 5.36. Differences may be due to error in 11 mL of lactic acid, not calibrated pH probe, or just error of probe, or a number of other factors. Pretty good in my book.
7.75 gallons starting volume @ 8.1 brix = 1.032 g/L
OG = 11.2 brix = 1.045 g/L
FG = 1.006 g/L via hydrometer. |

Notes: Dry-hopped blue moon clone. Hazy/cloudy because it's a wheat beer. Great hop flavor & aroma, citrusy, refreshing. Excellent summer beer.
Directions:
Heat 6.7 gallons of strike water to 161F
Mash in and ensure kettle reaches 155F.
Mash for 60 minutes.
Bring to a boil, add Hallertau. Set timer for 50 minutes.
At end of timer, add crushed coriander. Set timer for 5 minutes.
At the end of timer, add orange peel. Set timer for 5 minutes.
At the end of timer, cool to 100F as quickly as possible.
Put in fermenter bucket, allow to cool to pitching temps in fermenter.
Pitch yeast.
Ferment 10 days or until SG is stable.
Keg and enjoy.
