Single Infusion mash at 155 F (68 C) for 60 min

Add to 8 gal (30 L) RO water: 2g Gypsum, 2g Epsom, 3g CaCl2, 4g NaHCO3
Adjust mash pH to 5.2-5.6 with lactic acid or slaked lime if needed.
60 min boil:
60 min - 1.25 oz (35g) Warrior (15.4% AA) (49 IBU)
0 min - Add 2 oz (56g) Cinnamon sticks
OG: 1.091
Yeast: Imperial A31 Tartan
Ferment for 2-3 weeks at 62 F (16 C), adding 0.5 oz (14g) Cinnamon sticks and 2 oz (56g) Cacao Nibs for 1-2 more weeks. After this, package and optionally add tincture from 2 oz more cacao nibs to keg.

Notes: I set the efficiency down to 65 percent for a High Gravity brew but then considered using Reiterated Mashing. I split the grain in half.
Plan to use about 6 oz of bourbon - prepare 2-4 oz in a small jar and immerse the oak chips during fermentation. Add the chips and all the bourbon after fermentation. BTW - Some suggest to toss the Bourbon that soaked the chips to reduce the tannins...if you do that, youll need more Bourbon to taste.
Used Reiterated Mashing Techniques this time in conjunction with splitting the wheat and oats between mashes...worked great.
I am removing the DME (did not need it) and replacing it with Swaen Brown Supreme - 1lb...this should help with the body thinness and head retention and round this beer out further. I do BIAB in individual bags, so I did not need rice hulls.
Ended up 67% efficiency. Didnt use the DME at all. Finished the brewday, Aerated with 2 minutes pure oxygen, used 1 tsp of yeast nutrient, 1 whirlfloc tablet. Get the bourbon and start preparing the wood chips 9/3/2022.
Larry used REDEMPTION Pre-Prohibition branded bourbon.

Wild Turkey 101 - Cheap but burny - might do well in a RIS.
Makers Mark 46 - Supposed to have a complex vanilla taste
Jefferson Reserve - Uh, breaks the bank but NICE
Buffalo Trace - Vanilla, Mint, Molasses
Bulleit KSB - Rye forward
Eijah Craig Small Batch 1789 - Vanilla, Nuts, Molasses, Sweet
Time to go get the bourbon (I chose EC 1789) and put 4 oz with my LD Carlson Mocha Oak chips so they can booze up until it is time to secondary.
Fermentation: Using Wyeast 1762 Scottish Ale - Nothing much in first 36 hours, after that, I got a Krausen blowout and fermentation kicked into high gear...steady stream of CO2 in my blowoff vessel. Maintained for 5 days, then it slowed. Fearing a stall, I ramped the temp to 65 and later to 67. I get a burp of CO2 every 30-40 seconds now (Day 8) and I have a nice bed of sediment and clear dark beer. I ramped to 70 for 3-5 days to ensure complete attenuation and I will grab an F.G. sample at that time. Sample tested with hydrometer: F.G.: 1.021.
Purged the Secondary with CO2. Problem: I am using the Big Mouth Bubbler with the depth charge. One - its hard to get the beer in it without making the purge pointless. Two - I can get the oak out of solution anytime I want, which is nice. Three, I found a way to re-purge using the spigot and a length of tubing, so, after I added everything - I cleared the headspace with more CO2.
Now for 10 days bulk and I will pull the wood. Finally 6 weeks in secondary...then keg/bottle.
Placed in Secondary 9/??/22 with chips and bourbon - ended with 5.5 gallons.
This beer is off the chain GREAT...keeps getting better.
3 gallons gone on 9/10/22. Dark Mocha head, massive chocolate notes, boozy. Everything Dragons Milk should be...next time (Yes, there WILL be re-brews) try to add additional sweetness...it is nearly PERFECT. Cheers! |

- Mill grain twice
- Try sparging in blue bucket while kettle heats up
- Primary ferment for 3 weeks in bottling bucket, with new airlock & blowoff hose
- Bourbon soak vanilla bean (just to cover) & oak cubes (4oz bourbon) separately for 7 days
- When racking to secondary, add vanilla bean with its bourbon, and the soaked oak cubes (maybe without its bourbon)
- Secondary for 1 week in primary bucket, with normal airlock

Notes: Based on the Black is Beautiful recipe.
Had to change it up a bit to fit what I have onhand. swapped out the oats for flaked barley and reduced the overall flaked to just 2 pounds rather than 2.75 pounds to fit my mash tun.
Also changed the hops to just a charge of Magnum.
Will likely use Voss Kveik (ABV 12%) yeast or Nottingham (ABV 14%). Either way, it will be fermented at a low temp.
Did a 2 Liter starter 3 days before pitching and decanted the excess wort.
Steep the Chocolate and Black barley rather than mash due to MT size constraints. |

Notes: This is my mainstay IPA now. It is big, balanced - smells & tastes like a tropical fruit bomb and is very similar to Play Dead IPA by YellowDog brewing near Vancouver BC.
It isn't as complicated as it looks:
I mash all grain in a gatorade cooler with a false bottom for 60 min and get 82% eff
-Fly sparge to 7 gallons
-Boil for 60 min adding hops and whirlfloc at the appropriate times
-I mix the 3oz of citra and 3oz of mosaic together for all boil additions
-Ferment in primary for up to 3 weeks and dry hop during the last 7 days
-During the last 3 days do a cold crash |
