Notes: Brewed on 1/14/2021. First beer in Stillwater house. BIAB Method
Mashed at 155 degrees F for 75 minutes. Starting volume = 9.25 gallons at 159 degrees F to hit mash temp of 155 degrees F.
Starting volume after mash = 8.25 gallons.
SG = 7.7 brix = 1.0306
OG = 6 gallons @ 1.043 refractometer and hydrometer.
Pitched Nottingham at 68 degrees F.
Yeast activity was low to nil on 1/19/2021 so I kegged the beer. However, gravity was 1.015 g/L via hydrometer and 1.014 g/L via refractometer (should have been ~1.009 g/L). May have kegged beer a bit too soon or higher mash temp led to high FG.
Keg was carbonated to 6 psi and left in house (no CO2 attached) to see if beer FG continues to drop. Keg temp ~ 65 degrees F. |

Notes: Hazy Irish Red ale style-ish beer, I know that is not a style and it is all about homebrewing.
I tried the beer before I kegged it and it was just a normal light beer, so I added the Dry Hops to give it a flowery bouquet and experiment a little. Oh man, I'm glad I did! This Hazy Hindsight 20/20 beer, what a wonderful tasty beer from an Irish Red Ale start.
Tasting notes:
Smells citrusy with a lightly hopped smooth crisp taste on the tongue with a spicy twist finish.

Notes: I prepared cedar in a variety of ways. Boiling made the flavour flat. Roasting made it very "biscuit" light but harsh in flavour. Fresh cedar had the flavour I was going for. Maybe it is more like "spruce tips" and I ought to have added cedar tips.
I put 14 g raw, stripped twigs into some samples and tasted three days later. The flavour was minimal. I want a cedar-spiked beer, not a cedar beer, but this was still short on flavour.
Next brew will be 14g of cedar "tips" , dipped in boiling water then added three days before packaging. I will collect yellow cedar and western red cedar and do a quick taste-test before choosing which to use.
Completed: I used 18g of "yellow" cedar tips. It is almost perfect. It tastes like an excellent stout and finishes with just a tiny bit of cedar. It could use a bit more, but it is so close I'd be afraid to over-do-it. Enjoy. "Yellow" is the variety, not the colour. The colour was green.
Beer was left in Carboy after primary for a total of two weeks. Then racked into second carboy with the blanched cedar tips. It was racked into keg 5 days later. |

Notes: Previous brown ale was not what I wanted, a bit sweet and caramelly. What I want is more like Goodbeer Facuets / Nide Beer's "Endless Brown Ale", which has a hint of coffee taste to it.
Only reason I split the caramel between C60 and C75 is that's what I had in my freezer. Otherwise would have just gone with all C60
Changed up the hop schedule from other brown ale as well, since I had forgotten the adjust the AA% for the hops I had on hand, which were rated much lower than the default setting here (I guess that's why it was not even remotely bitter).
This turned out like crap. Overly sweet and thin. |

Notes: Local Malts: my local shop only supplies the 2 - Row (3L). Everything else they had. Color will be slightly lighter with my local 2 row (3l) malt. Probably not even noticeable from what my recipe calls for.
Beer Clarity:
1 tablet of whirlfloc 10 min before boil flame out (1 tablet per 10 gal)
Honey Addition: Dissolve 12 oz of honey to 1.5 cups warm (120f) water. Let your honey water cool to room temp and then add the honey water to your fermentor 2-4 days in fermentation. Stir gently but thoroughly not to oxygenate your beer. Place back the lid.The longer your wait to add the honey the more honey and sweetness you taste, expect a renewed fermentation within a day or two after addition. **Note** (Raw honey contains wild yeast and may have a chance to transmit off flavors to the beer.
Priming: Wait till all fermentation has stopped. At this stage taste your beer for the honey sweetness amount you want to make a decision on how much priming sugar you need if your bottling your beer. (This will be trial and error on the CO2 amounts for bottles)
The Blonde style is not right because I wanted a boozy Beer. If you want to be true to the style of blondes then use 8lb of 2-Row(3l) and 2lbs of Munich and use .67 ounces hops in your boil of 60 min. to bring it up back to 25 IBU.
