Notes: Using a starter from last batch - part WLP005 and part Voss Kviek.
The mash SG was so high I had to keep sparging to get the SG down to 1.045. After adding hops and boil and cool it was apparent the color was not there. I added 1 more oz each of Roasted Barley and Midnight Wheat, along with the rest of the package of EKG hops. After pressure cooking late addition and tasing it was very harsh (bitter) so I added 3/4 gallon of wort (at 1.050) from Dark DME and RO water. This mellowed out the excessive bitterness. Yeast was pitched in early evening. Ended up over 5 gallons of wort to ferment.

| Notes: Water volumes were a little off. I was over on pre-boil volume and under volume after chilling. Need to spend more time on fine tuning water amounts. Used a protein rest of 131 degrees for 15 minutes to help reduce chill haze that has plagued this recipe in the past. My Post boil gravity was 1.052.Exactly what I had planned for.I used FWH on this session as apposed to usual hop regimen. Normally 2 ounces of Saaz at 60 min, 2 ounces of hallertauer at 20 min. Used two packs of US-05. Rehydrated and proofed with 1 cup of wort pulled from kettle after hot break. Yeast showed nice thick head of foam and activity. Pitched after cooling wort to 68 Degrees Fahrenheit. |

First brewday with 30PSI KAB4 burner, first 5-gallon brewday in a while.
Brew went well. KAB4 is a G-D beast. I had a massive boilover with just 7 gallons in a 15 gallon kettle.
Ended up with 4.5 gallons in a 6 gallon fermenter. OG was only 1.060 vs. the expected 1.068. Had reserved about an extra gallon of wort for starters... leave that be next time. Need to dial in the new burner in my system.
Chilled to 78 degree F and allowed to chill overnight in sealed kettle (alum stockpot). Pitched full starter and beer to fermenter 01.10.15 ~0900. Temp at 64 degrees F.
01.11.15 am. Active fermentation.
01.12.15 pm, pulled dirty airlock and capped with foil. Small blowoff.
01.15.15 pulled foil cap and added clean airlock.
03.20.15 some tasting notes - Grain bill is needlessly complex and unfortunately results in a competition with the yeast character. For the next brew, recommend a much simpler grain bill - see Brewing Classic Styles. |

Notes: The Pilsner was an efficiency addition, since mine was quite low. If yours is normal you can leave out the Pilsner malt altogether. This beer had a slight issue during fermentation. On a few days the temp exceeded 75 degrees, but was quickly chilled in a large bucket and kept there for a week at 65 degrees. Right before the cold crash and during the chill phase a salty and slightly funky smell was coming from the airlock and the beer. Samples tasted fine, but had a bad smell which therefor inhibited taste mildly.
I thought perhaps the higher temps caused the yeast to produce off flavors and after researching London 1028 I found that it can produce sulfur notes at high temps. I wouldn't call what I smelled sulfur, but since it is known to produce some odd notes at times I figured I could let this pass. I also though the yeast itself was the cause, so I added finnings during the crash to drop it out.
Good news is after bottling and letting them condition for another week the odd smell is completely gone.
Taste Notes:
Aroma - Smells roasty with a hint of sweetness and malt. A tad earthy from the Goldings.
Color - SRM is spot on.
Taste - Roast up front with hop bitterness as the roast recedes. No pronounced big malt flavor.
