Notes: I added 3lbs DME to get close to efficiency due to equipment limitations.
On 6th day of fermentation add yeast nutrient and fruit puree. Stir to rouse yeast.
Add bourbon soaked oak chips for 6 days in secondary (taste daily for desired flavor).
7 Days before bottling toast cocao nibs and add to secondary with vanilla beans. If using Vanilla extract add just befor kegging or bottling. |

Mash at 153deg for 60 min. Sparge, add molasses, and boil 90 minutes, adding hops as indicated. Pour enough of boiling water to cover over the chips in a sanitized canning jar (or any other vessel that can take the heat). Let them sit for 5-10 minutes. Pour the chips (and hot water) straight into your secondary fermentor.
