Note: switched to Rahr base malt because Skagit malts are typically low in protein. Need at least 12%, which Rahr has, according to the book. Same for the Munich and Vienna, the switched malts both are cited at. 8-12% protein.
Note: using direct kettle heat for raising the mash temp and mashing in the boil kettle. This will be more difficult to manage than for the smaller half batches but still seems the simplest way to accomplish the step mash with my equipment.

Ferment at 55F for 14 days. Transfer to secondary.
Lager at 40F for 6 weeks.

First batch used 0.25 and 0.5 for the 10min and 0 additions.
Second batch I'm doubling the late additions. I'm also adding .5 tsp calcium chloride. Also, I'm planning to ferment in the storage area. I noticed that the temp of the cleaning water is holding around 58-59 degrees and I think it would be a great opportunity to get another batch of Alt going without having to take up the fermentation chamber. |

Mashing Schedule: Combine malt with 4.5 gallons (17 L) of water at 148°F (65°C) for first rest at 122°F (50°C). Rest for 30 minutes. Raise the mash to 140°F (60°C) and rest for 30 minutes. Raise the mash to 158°F (70°C) and rest for 30 minutes. Raise mash to 170°F (76°C) and begin runoff.
Boil: Collect 7.25 gallons preboil and boil for 120 minutes. Post-boil volume will be about 5 gallons (19 liters) with a vigorous boil. Ferment at 50°F (10°C) to terminal gravity (3.5°P, 1.012) and rack into a clean and sanitized carboy. Lager at 34°F (1°C) for 6–8 weeks. Prime with 3.3 oz. (94 g) of dried malt extract at 40°F (4°C) and bottle. Allow to sit at 65°F (18°C) for two weeks, chill, and drink! |

Notes: Boil and treat water day before brewing. Water PH - 6.2. Sparge water PH 5.8
11.04 Brew day. Mash with 20 Banana on the beginning of brewing, together with pale malt. 45 min - 68C.15 min - 75C. Black malt - 20 min.
Sparge water 10L. Collected 23L with 13.3Brix.
Boil 60 min. 50g Fuggles - 40min. Lactose, Candy sugar - 15min. Yeast Nutrient - 10min.
Finished boiling with 20L 17.8 Brix
19.04 - ferm. finished with 1.030 SG. Added banana extract (3 medium banana mash and immersed in vodka). Ferm started again.
30.04. Ferm finished with 1.028 SG.
Split up the beer in to buckets: 1) Added 3 banana soaked in vodka
2) Cold brew coffee
