Last batch went really well. Going to up the yeast nutes and whirlfloc. Adding 5 g of ascorbic acid to the mash as an antioxidant protector.
Previous batch.
First batch went really quickly. Was definitely in the same vein as AB, but not close due to the caramel malt shifts. Redoing with the right mix 90/10 and all chinook. Ran out of London Ale Lallemand, subbing Windsor.
Want to stick with older recipes and modern clones but don't have enough Special B or Chinook.
Trad recipe is 90% Brewer's Malt 10% Special B, 90 IBUs of Chinook with 4 additions 90, 45, 15, 0. https://www.homebrewtalk.com/threads/can-you-brew-it-recipe-for-stone-arrogant-bastard.176191/
Going to try and fake Special B with dark British Crystal and add some caraaroma. Hops will be harder. Bittering with Bitter Gold and finishing with Chinook might be the way to go.

고소하고 짙은 로스팅/스모키 풍미의 다크 로스팅 원두를 활용해 필터커피를 내린 다음. 맥주와 함꼐 서빙.
커피와 맥주 각각의 향을 먼저 즐긴 다음 맥주에 커피를 타서 완성시키는 맥주.
Brewing note
필터커피를 타서 맥주가 워터리/밍밍해지는 걸 방지하기 위해 원주의 도수와 질감을 많이 높였다.
캬라멜 몰트를 10% 넣고 약간의 유당을 더해 커피를 탔을 때 맥주의 질감이 너무 빠지지 않도록 했다.
동시에 로스티드 몰트는 절제하면서 커피의 로스티한 풍미로 맥주가 완성이 되게끔 디자인 했다. |

Notes: Step Infusion
1. Add 3.5 gallons of 140°F water to the crushed grain, stir, stabilize, and hold the temperature at 140°F for 30min
2. Add 2 gallons of boiling water, bring up to 155°F , hold for 30min
3. Raise temperature to 165°F , sparge with 1.5 gallons of 170°F water
4. Collect about 6 gallons of total wort
BOIL SCHEDULE
0 min: Add 1oz of Hallertau
30 min: Add 1oz of Saaz
40 min: Add 1oz of Saaz
50 min: Add .25 oz Irish Moss
58 min: Add 0.5 oz Saaz
60 min: End Boil and cool
5. Move to fermentor (total volume 5 gal)
6. Pitch 34/70 yeast at 70°F
7. Ferment at 55°F for about 1.5 weeks **Add T-58 Yeast on day 5**
8. Move to secondary
9. Let sit at 45°F 9 days
10. Add 1 oz Saphir dry hop for 5 days
11. Warm to 70° and bottle |

Notes: Bakke Brygg Humlejul er en humledrevet ale i Amerikansk Amber-stil. Ølet har en fin og rødbrun maltkropp, med noe restsødme, og er balansert med en god dose sitrushumle. Ønsker du enda kraftigere humlepreg, kan du fint doble tilsetningene på både 0 minutter og tørrhumle.
Dette ølet er drikkeklart på 2-3 uker om du tapper på fat, eller en måneds tid om du tapper på flasker, og er dermed et godt alternativ for deg som er litt sent i gang med juleølbryggingen. Ølet fungerer også godt som en avveksling fra de kraftigere og tyngre juleølene. Brygg denne som en del av førjuls-sysselen!
Pitch gjær på 17 grader. Gjæring på 18 grader til stormgjæring roer seg ned (tar typisk 2-4 dager), deretter 20-21 grader i 5-10 dager. |

| Notes: used about 7.5-8.5 gallons of RO for mash/dough in and hit a ph of 5.00 (corrected at 5.30) and didn't add the salts until 60 minutes in. 2 tsp's of calcium carbonate, 1 tsp of gypsum, 1 tsp of epsom salt and 1 tsp of baking soda. after rechecking the ph, or about the time I added the additional 3.5-2.5 gallons of RO water to the mash (boiled and blended), the ph went up to 5.3 (5.6 corrected). Of course, the rest of the sparge water came from filtered tap water with 1/4 tab of campden tab added and lactic acid until I got the 6 gallons of water down to <6 ph for sparge at 165-175 F. I also boiled up an additional 2+ gallons of RO water and blended to the wort during mash to gently get to the mash temp for a total of 18+ gallons for the wort. I also did the boiling the wort thing as always do to bring up the mash out temp. I try not to heat it up on the burner so that I don't scorch the grain bed, so I blend like a turbid mash. |
