Notes: Check for next time:
1. How is the body? Does it need oats/wheat? (Perhaps 10% each for the grain bill)? Does it have a thin mouthfeel?
2. Is the perceived sweetness good? (Less or no honey malt or corn sugar instead of turbinado? Perhaps mash at 149-150 versus 152-154?)
3. Is it dry hopped enough? Push the late hop additions even more?
4. How is the tropical flavor versus tropical nose?
*My El Dorado package had 8.4 oz versus 8 oz, so I dry hopped with a total of 2.4 oz El Dorado versus 2 oz in the recipe. |

Notes: Pour 9l litres of Organic Pure Tassie apple juice over 500g of ginger, add a bottle of maple syrup. Throw on a cider yeast and nutrient. Let it ferment out for a week. It ripped through it and got it to 0.00!
Meant it was super dry once fermented out. If you like really dry cider you can leave it their and keg.
I added another 1.25 litre of unfermented Organic Pure Tassie apple juice, threw it in the keg and its great.
