Notes: use lactic acid to drop pH to 4.5 add carton of goodbelly @110, boil for 15 min once pH is ~3.5, add 2 oz galaxy 180° whirpool, US-05 @65° add 1 can vitners harvest of raspberry puree, 4 lb frozen raspberries, and two lbs dragon-fruit puree from whole foods during primary.

Notes: Ferment at 48 until signs of fermentation are evident. Ferment at 50 for the next two weeks. Allow temperature to free-rise to 55 and ferment until activity slows. Conduct a long diacetyl at 60 until terminal gravity is reached (7-14 days) before cold crashing to lagering temperature. Cold condition for at least 1 month at 35, although 3 months is better.

| Notes: Brewed 12/17/16. Strike water was 169F and hit right at about 152/153. Only recirculated a half gallon because of this. Sparge went well and nothing stuck was able to get full volume without cutting as it didn't fall below 2 brix, got close though. Kettle efficiency was 82% which is a little lower than expected. Hit everything on the nose including the gravity. Temp cooling went faster due to low OG I believe but still need to look into a different temp cooling method to quicken things up. Pitching temp stabilized at 63F. 12/18 temp was about 62F so I cooled to 61F. 12/19 and 12/20 temp was sitting at about 62F the whole day. 12/21 I put a heater into the beer and kicket it up to 68F. Out of the swamp bath on 12/26/16. 1/5/17 I transferred the beer into the keg and added the flavor grapefruit compound from Amoretti. Attenuation was a little lower than expected but that is ok, looking for something sweeter anyways. I went with 4oz of the compound. Directions said 1/2 - 1% concentration and 4oz was about 1/2%. Bottled on 1/9/16 and carbed to about 2.9 volumes. Won an award in the BAM World Cup of Beer |

Notes: My attempt at a Small IPA. . .w00t.
Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 180F. 90 minute boil. Cut flame and chill immediately to 175F, add 0 min Aroma hops, sit for 5 min and then continue chilling to 66F. Pitch and ferment at 66F. First dry hop addition goes in as soon as krausen falls. Cold crash to 40F after fermentation is complete, fine and transfer to secondary. Add second dry hop, 2 days later add third dry hop, filter and bottle at the end of day 4. Bottle and condition for 21 days at room temps. |

Here's the recipe we've been using for our pinot noir barrel solera project: http://beersmithrecipes.com/.../american-solera-saison Ferment with whatever belgian strain you prefer (i use my wild caught stuff) then once in the barrel brett and (eventually) lacto go to town on the remaining sugars and make an awesome funky brett beer with a mild tartness. We exchange half of the beer once every 6 months or so, whenever we can all get around to brewing the recipe.

Roasted pecan nuts in oven for ca 10 mins, right before they scorched.
Mashed in at 70deg C and let sit for 60mins, no heat or water added beyond first infusion.
Collected 25l of wort at ca 1.041.
OG : 1.06
Chilled to 20 deg and pitched yeast including starter.
Fridge set to 18 deg ambient.
Let rise to 20 over 2 days
Keep at 20 for 6-7 days.
Rise to 22 for 20-35 hrs.
Cooled down to 8 deg for 5 days, then racked to secondary.
FG 1.013 -> Abv = ca 6.2%
Added 15g of Summit pellets for dry hopping.
Let rise to 22 deg for next week.
Bottled on the 26th. |

Dissolved the sugar in half a gallon of cider at 180deg. Added the spices and orange at this time.
Used Lavilin 71B - 1122 white wine yeast.
Added one cranberry juice concentrate at kegging (after stabilization).
FG was actually .995
This is pretty dry. If you want it sweeter, add more cranberry concentrate or add some apple juice concentrate. |

Mesketid: 30 min ved 50c, 55 min ca ved 69-71c. Noen min på 78 c

1 tablett protaflock og 2g gjærnæring ved kokeslutt.
Einerlåg, ca 21 l til mesk.
Fikk veldig lav effektivitet (noe lav effektivitet var forventet) pga malttype (umodifisert), + muligens litt grovere kverning enn vanligvis. Og mye malt i røret.
Stegmesking : Kunne mesket inn ved 40c i 20 min for å prøve å få enzymmodifiserig / øke effektiviteten - deretter 55c og 67-70c). Det var egentlig tanken med innmeskingen vi gjorde på ca 53-54c (som vel bare endte opp som ett ekstra protease-steg / redusere chill haze)

Voss settes på ca 30c
Windsor ale på 19-20c
Gjæres i to uker. Flaskes med lav/ingen karbonering.

Windsor: gjærer ned til 1.020 (65% utgjæring) ca 5% ABV
