BREW DAY : March 16th
Stage one; Mashing and boil without honey only at 3 gal total gives
> OG 1.062 Target og was 1.066
>Loss of .004 to OG
Stage 2; Will dissolve honey into 170 degree water
> will add diluted honey when fermentation at peak Kraust
>target OG post addition @4 gal should now be 1.056
> New target ABV around 6%
Stage 3 Addition of vanilla bean
> Racked beer into secondary Carboy after 4 weeks
> quartered and halved 2 1/2 Vanilla bean adn added
them to 2oz of Whiskey
>after a one week soak i have added the now Vanilla
extract to the beer
> going to let sit in secondary until kegging to serve,
this will allow almost another month for all the
flavors to mellow out and blend
tastes good, maybe next time just little more vanilla bean, but besides that its really good

Notes: Far from a clone of the Heady topper clone recipe, but it's what it started as. Using the same yeast Conan (OLY-052, WLP095, A04, Lallemand New England DRY), and similar hop varieties (OG recipe bittered w/ Magnum, and dry-hopped and boiled with equal amounts of Centennial, Columbus, Amarillo, and Apollo) However my Apollo hops are not very fresh so I'll leave them in the boil.
The heady topper is also 110 IBU's, and 8% abv both are a bit high for how I like my NEIPA's. - Clone recipe here: https://www.morebeer.com/products/heady-topper-clone-topped-hops-double-ipa-grain.html
