| Notes: This recipe was for the Brew United contest. It limited you to certain grains and hops. I toasted 2 lbs of pilsner malt in the oven for the color. You can drop the wheat and caramel malt and use a dextrine malt instead. That would be much more traditional. |

Notes: - Brewed on 8/18/18
- Expecting mash efficiency of 78% which implies a pre boil gravity of 1.056
- Initial PH was 5.8, added 3ml of lactic acid and second reading was 5.55, added 1 more ml of lactic acid and reading didn't change, then added 1 more ml of lactic acid and final reading was 5.5. **Update. Think my issue was not mixing the lactic acid with the water prior to doughing in.
- Mash temp fluctuated a bit but was able to settle it at ~154F
- Hit 13.1 plato pre boil gravity which converts to 1.053 vs. 1.056 target so 74% mash efficiency vs. 78% expected
- Original gravity reading was 17.1 plato which converts to 1.070
- After boil had ~6.0 gallons in the kettle and ~5.5 gallons made it into the fermenter
- Pitched 1 smack pack of wyeast 1056; started fermentation at 64F. The two thermometers had different readings so ferm temp was in the range of 64-66F and held it there.
- Packaged (too early) on 8/27/18, once out and ready to package noticed some airlock activity but decided to keg anyways since the hydrometer did not taste too sweet. Attenuation was at 72% and expected 78%. Probably could have let this one go and got to 75-78%. |

Notes: Based on Weldwerk Brewing's Juicy Bits NEIPA, Mujoose is super smooth and juicy.
It won a Gold and Best in Hazy IPA or NEIPA Class at the Christchurch Home Brewers Association Annual Jasecomp IPA Competition on the 27th March 2021, with a BJCP score of 49.5/50.
It won a Gold and Best in Class at the New Zealand Northern Region Amateur Winemakers and Brewers Association Regional Competition on the 10th October 2020, with a BJCP score of 46/50.

Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), drop temp to 14C and add the first dry-hop addition. About 3 days later do a cone dump and add the second dry-hop addition for another 3 days. Cold crash to 1C and then do another cone dump.
Package at 2.6 volumes of CO2 and consume fresh. |
