Notes: 6.1% base beer for the Saison.
6.7% base beer for the Dark Strong.
Split batch 4 ways:
1 x Saison 565 with 1 x tin prunes in syrup added in secondary
1 x Abbey Ale 530 with 1 x tin prunes in syrup added in secondary
1 x Abbey Ale 530 with 1 x tin figs in syrup added in secondary
1 x Abbey Ale 530 with 1 x tin prunes in syrup, 4g medium toast French oak chunks, and dregs of Cantillon added in secondary and AGED 1 YEAR
On brew day: Mash pH hit 5.4 as planned. Wort came out within 1 point of OG target. Got 19L of wort allowing for trub loss.
Wort smelled super strongly of liquorice toffee! Guess a combination of the caramunich, dark candi syrup and star anise.
Next time, for Original Sin Mk II, increase candi sugar, make base malt red X, lose caramunich, swap Munich for Vienna, make special b 3%. |

Notes: Yeast could also be White Labs WPL007 Dry English Ale or Nottingham Yeast.
Sparge with 3.5 gallons of water at 170 degrees.
At 0 minutes add the hops, coffee and caco nibs and stir for 2 minutes and let it rest for 28 minutes and then chill down to 64 degrees.
Add Oxygen for 90 seconds.
Add yeast and let the fermentation rise up to 68 degrees till attenuation hits 1.035 sg and then ramp up the temperature to 72 degrees and hold it there for 14 days. Slowly crash cool the fermenter down 5 degrees each day for 8 days until it reaches 32 degrees and then bottle or keg.
2.2 to 2.3 volumes of CO2.

| Notes: "Jeeringly Ransomed Havoc" is an anagram of "John and Rosalie McGreevy" and will be brewed to celebrate the marriage of the latter. Baltic Porter is commonly brewed in Poland and has it's roots in English and Irish stouts and Porters. Bia Hoi is a low-alchohol, rice-adjunct-heavy Vietnamese lager, usually drunk young. Canadians drink to forget that they're from Canada, so I forgot to put any distinctly Canadian ingredients in this beer. |
