Notes: Got no spice in the nose, so I made a concoction of 1 oz of rum and 1 tsp of pumpkin spice and 1 cinnamon stick for 4 days, I will strain that into the keg.
It's the best amber I've ever tasted anywhere.

Lang mesketid og koketid.
2 stk Profalac...Evnt Irish Moss.
Mye Humle. Innkjøpet av humle medfører det holder til en batch nr 2. Må bare kjøpe inn 100 gram Cascade.
NB !!! Batchene skal rett inn i 6C kjølsekap. Ingen stormgjæring i rom temp. Det vil ødelegge pilsen.
67C etter 10 min kontroll.
29.06.2016: Farge - litt sånn søle brunt. Bra skum. Malt blanding ok. Litt besk karamel. Bra med kullsyre. Fyldig.
Til neste gang: Sjekk SRM - må lage den litt lysere. Stygg farge....
Malt: Caramel/crystal - for mye. Prøv å finne en malt type med litt mer sitrus/frukt. Mer pilsnermalt, mindre caramel (4%). Munic light istedenfor muich dark.
Humle: Bytt ut cascade med citra.
Litt fruktigere, litt friskere og litt lysere og få bort bitter karamel smaken/fudge.
Gjærmengde er helt ok.
NB! Undergjær- Må ha nedkjøling ned til 8 grader. Siste ble gjær ødelagt da nedkjøling kom ned til kun ale temp - 23 grader.

| Notes: Primary fermentation about 7 days at 50-55F. secondary with Dry Hops for 7 days at 45-48F. Remove dry hop (bag) and lager for another 21-28 days at 38-45F until golden-clear. Bottle with 1/3 cup of extra light DME boiled for 10. Store cellar temp 50-55F for 3 weeks. Peak taste from 5-10 weeks. Can keep for 6 months in dark cool area. |

Notes: Fermentation is everything for Belgian beers! You have to use the correct yeast and get the fermentation temperature right, so temperature control is essential. Use White Labs WLP500-Trappist Ale (called Monastry Ale these days). Make a starter with the yeast; this will need a 2L starter. See : http://howtobrew.com/book/section-1/yeast/preparing-yeast-and-yeast-starters
Pitch yeast at 18°C and leave it for a day or two, then switch off the temp controller and let it rise by itself until it tops out at 26°C after a week or so. If you need to help it to reach that temperature then that’s OK too. You want the beer to ferment out pretty dry.
Bottle and then keep the beer at 24°C for a couple of weeks to carbonate and condition. |

Hinterland is a beer long in the creation, and even longer in the appreciation. On the aroma, deep reverberating roasty bitterness and sweet dark chocolate. Also in evidence, woodsmoke, rich vanilla, mocha and marzipan. When tasting, Hinterland reveals itself as the beer moves from cellar temperature to something warmer, yielding all of the above plus dried fruit, rich ganache and ending on a resoundingly warming finish redolent of chocolate liqueur or plum brandy. Towards the end of the fermentation allow the temperature to free rise. This will let the yeast finish off the fermentation and scour off-flavours from the beer.

Notes: This recipe was originally a kit called 'Black F-Rye-Day Pale Ale' from Adventures in Homebrewing. However, I changed it quite a bit.
I set my mill gap as tight as possible to mill the grain (except the malted rye) as close to flour as I could to ensure optimal extraction.
First wort hopped with .75 ounce Magnum and 1-ounce Spalt Select at 5 minutes.
Pulled 1 liter or wort from mash and diluted to 2 liters to make a starter. When I pitched the yeast I added all the wort back into fermentor, bringing gravity down to 1.073. Will add half a pound brown sugar to increase gravity by 4 points.
Will age on .75 ounce of medium toast oak chips that have been soaked in rye whiskey after fermentation is complete. |
