Notes: Traditional bitter style beer but using local hop, Topaz and Cascade (locally grown...), ending with a very sessional bitterness and hopefully easy drinking mouth feel.
Pitch with Fermentis S-04, ferment at 20 deg C, terminal gravity expected around 8 days.
Chill back like you would a lager to 4-6 deg C.
Take off the yeast and mature at max. 6 deg C for another 14 days.
Filter and carbonate to a sparkling 5-6 g/l.
Should be quaffable and taste like more! |

Notes: A fully upgraded version of the flagship beer. A modern IPA with late additions of Simcoe and Amarillo. Now dry-hopped with Cryo Cascade.
We recommend boiling your hops in a hop bag (muslin sock) or straining them out before primary fermentation.
Add Irish moss or whirlfloc to your boil for the last 15 min. for better clarity. (not included in the kit)
Dry Hopping: Transfer (rack) the beer by siphoning to a 5-gallon secondary fermenter. At this point add the Cascade Cryo Hop to the fermenter (Dry Hop). Allow your beer to finish fermenting and absorb the fresh dry hop aroma. Minimum 4 days before clearing and packaging. |
