Notes: "the abyssopelagic layer or pelagic zone that contains the very deep benthic communities near the bottom of oceans. "Abyss" derives from the Greek word ἄβυσσος, meaning bottomless. At depths of 4,000 to 6,000 metres (13,123 to 19,685 feet), this zone remains in perpetual darkness and never receives daylight. It is the deeper part of the midnight zone which starts in the bathypelagic waters above.[1][2]"
Sacch rest at 152F for 60 min. Stir in the rice huls prior to washing/sparging; the rice hulls will provide additional structure for the bed that you need to get the goodness washed into the kettle. Boil. Kill the flame, add the 0 min hops, swirl cover and let sit for a 60 min hop stand. Aerate, pitch and set to 68F for 12 to 17 days. Cold crash for 2 days to 37F and then bring back to 68F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 68F. |

Notes: Mash Temperature: 151°F (66°C), then mash out to 165°F (74°C).
Adjust water to hit a mash pH of 5.4.
Boil for 75 minutes (to drive off DMS) following the hops schedule.
Pitch the yeast at 52°F (11°C) and ferment at 54°F (12°C) for 5 days before raising the temperature slowly to clean up any diacetyl. Rack to secondary day 18 and allow at least 7–10 days of cold lagering time before packaging.

5.7.2016 Initial fermentation temp set at 65 degrees
5.14.2016 gravity 1.015 and 4.75 pH
5.14.2016 - turned fermentor down to 60 degrees
5.28.2016 - gravity 1.012 crashed to 38 degrees
NOTE: we did have some trouble with the Glycol and the temperature so this beer fermented warmer for longer, which I guess is appropriate for a steam beer. |
