- consider more bitterness, but no aroma.
- corriander seems right, but the orange deterriorated quickly, not sure to use more or less.
Also, it appears as if the beer has a slightly soapy off flavor, so fermentation had some issues it seems. Yeast profile is nice so keep that, just reduce temp slightly?
- perhaps get it off the yeast sooner, like 1 week in primary 1 week condition then bottle, to keep some of the funky yeast stuff. also it is slightly tart, perhaps too tart for the style which is likely from the acid malt, so drop that.
adjust IBU slightly, move 5 min addy to 10, also needs more umpf, something to give it a bit of "oh that's nice" character, malt related probably? |

Build a BIG, oxygenated 3 liter starter from 10.7 oz of DME and 3 liters of water. Oxygenate and use Wyeast Yeast Nutrient.
Add the oats a bit later in the mash and mix into the top layer of the mash to avoid all the oat stickiness on the bottom of the mash tun. Potentially use some rice hulls too.
Pitch at 63 and ferment at 63-64.
Initial pre-boil OG should be around 1.080. Add any DME necessary to get to that number, possibly 1-2 lbs. Boil for 3-4 hours until the OG reaches 1.124. FG should be around 1.048 for a 10.0% ABV beer.

Modified for 5 gal. From the Easter Quad recipe by Michael Tonsmeire in AHA.
Make a 1.5 L yeast starter with White Labs WLP530 Abbey Ale or Wyeast Trappist High Gravity 3787 using a stir plate.
Saccharification Rest: 60 minutes at 152°F (67°C).
Batch sparged with 180°F (82°C). Collect 9 gallons of 1.092 runnings including 1 lbs of table sugar added to the boil, plus 1 gallon of final runnings (boiled separately on the stove).
Chill to 63°F (17°C), 60 seconds of oxygen. Pitch the starter. Leave at 63°F (17°C) to ferment. Warm to 70°F (21°C) after 3 days.
Add Cinnamon Sticks after Primary Fermentation
When fermentation is complete, package as desired aiming for 2.4 vol of CO2.
Dough-in cold at approx. 70 F with 24 qt H20
Slowly raise temp to 148 F and rest 75 minutes
Mashout 170 F for 10 minutes

Notes: This is a great beer when fermented at 70 f or less; my most common crowd pleasing brew in fact. But Ringwood is a temperamental yeast. Fermenting a higher og version of this beer at 72 has resulted in a beer so funky that it is basically undrinkable. Be careful with this yeast, even at high ibus. |
