Notes:
I'd say the lime is noticeable but not quite prevalent enough. I would try upping it to 2/3oz next time. I had intended to add 1oz of zest but forgot to actually zest any limes until the 10 min addition went in - so we got about 8 grams before it was time to toss it in.
All in all I'd say this recipe is great. Noticeable hoppiness in a 4.5%ABV beer. It's really been a hit with my friends during these hot Florida days we've been having.
EDIT: Forgot to mention, went from grain to glass in 11 days. |

Notes: If you're not from USA, and the northeast at that, Otis Spunkmeyer used to be a brand of cookies found in various locations. The idea was your store would get the dough, and a little oven, and with little effort you could pump out the most amazing Chocolate Chip Cookies, all warm and gooey. This beer is a love letter to those days. Shooting for warm, biscuity, bready malt body, with notes of sweet chocolate, vanilla, and a bit of coffee/toffee/other "dessert" notes from the secret weapon, Black Treacle. Speaking of which, for the wort, DON'T actually use American or Black Strap molasses, but instead Lyle's Black Treacle, from Amazon. Crazy good stuff. Loads of flavors.
Let the primary fermentation run it's course (shoot for 14 days on the trub), and then let it sit for seven days on a slit open vanilla bean in a secondary vessel. At packaging (I'm using a corny keg), add 16 oz. of Ghirardelli chocolate syrup. Dark beers being mysterious, you'll get a bang for your buck aging and conditioning this, the longer the better. That said, that treacle works wonders, and after only one week (21 days in primary and secondary, and 7 to condition) you'll still have a surprisingly complex dark treat. Between that, the chocolate malt grain, and the lactose sugar to leave residual sweetness, you should get a nice chocolate effect to go with the malt. Hops should balance this malty, chocolatey treat for these last chilly days before summer and its sours, wheats, and IPAs... |

Jeg plukket einerkvister (skudd) fra eineren på hytta i går, og begynte dagen i dag med å trekke einerlåg på ca 80 grader i to timer. Jeg fylte 25-literskjelen og 8-literskjelen til randen med einer, uten å komprimere. Fylte deretter på henholdsvis 22 og 8 liter vann. Varmet opp til 80 grader, lot det trekke uten lokk. Jeg plukket to fulle bæreposer med ferdig kuttede einerkvister, men trengte bare halvparten.
Plukket deretter ut einerkvistene, og silte lågen oppi meskekjelen med falsk bunn. Fin gyllen farge, og veldig behagelig te-aktig smak. 4.5 kg malt meskes med ca 16 liter låg. Litt vanskelig å bli klok på termometeret, men forsøksvis 69 grader.
Etter 100 minutter mesking hadde temperaturen falt til ca 67 grader. Tappet da meskevannet ut i gjærkaret, og tilsatte de siste 12 litrene av einerlågen på ca 80 grader. Temperaturen i mesken med skyllevannet ble da ca 71 grader. Etter skylling i ca 30 minutter var temp 69.
Jeg kokte vørteren i 3 timer. Startet med ca 23 liter og endte med ca 16,5. Kveiken fikk jobbe i 3 dl med vørter mens kok pågikk. Prøvde å pitche kveiken på 40 grader , men det ble ca 34.

Heftig plopping i gjærlåsen neste morgen. Gjæringsdunken holdt da ca 32 grader. deretter falt temperaturen ca 2 grader i døgnet. Neste gang hadde det vært lurt med et varmeelement. Overraskende vond lukt fra gjæringskaret, men smaken fra testrøret ved første måling var ok. Sterke smaker, tror jeg kjente appelsin og pepper.
Målte SG etter ca 40 timer, da var den på 1015.
Målte SG etter 5 dager. Da var den nede i 1.010
Flasket rett fra gjæringskaret og til PET-flaskene etter fem dager (fredag). Tilsatte ikke sukker. Satte flaskene på ca 21 grader i tre dager, deretter kaldt. Håper på karbonering via restsødme. |
