Notes: 1800 mil starter
dissolve cocoa powder with 5 oz corn sugar
in 1 qt hot water to make syrup.Add syrup
45 minutes into the boil.
2-3 vanilla beans soaked for a week
in rum added to secondary.
This beer finished at 1.020 due to the
unfermentables and high mash temp.
The F.G was 5.0 a bit lower than
expected.Efficiency was way off.
In my 14 years of brewing this is my
personal favorite beer.
Head retention and lacing last to the
bottom of the glass.
Batch #2 finished at 1.015 and shows
in final ABV.This is where I want this
beer to finish,it is more to the style.
Brewhouse efficiency was around 62% in first batch.Batch #2 was 73% which is
about right for my system.
ABV 5.70 nice winter beer with some
alcohol warmth.First batch was thin.
Chewy,nice chocolate-coffee flavors
with a touch of vanilla.
I`ve made 4 batch`s of this and found
that this last batch from 1-2-14 has hit
it`s peak after 4 months.
The longer it ages the better it gets.
Batch 3 and 4 I made this year (2014)
Jan. and April.I`ve got it dialed in
at 5.70 ABV and recipe is solid at 70%
efficiency.If you try this recipe I hope
you have good luck with it.The rum and vanilla beans are what make this standout
for the final taste and richness.I would
recommend to age at least 2 months.

| Notes: The grain bill is Jamil's, the hops are changed a bit, mostly because I had 8oz of Simcoe in the freezer... I've made this before, it turns out very nice. be careful on your measurement of the chocolate malt, a little goes a long way, and a little more goes too far... |

Pitch at 48, ferment at 50 for 5 days, then bump 2 degree per day until 60 for 2 days (diacytl rest), lager/carbonate, decrease 2 degrees per day down to refrigeration temps so you don't stress yeast..will probably start peak at 8 weeks old
Don't raise temp if there is any sulfur or smell of off flavors
Can use any German lager yeast.

Notes: Use new Simpsons DRC (Double-Roasted Crystal) Malts for the 2 lb of crystal malts. Use 2 packets of the yeast to ensure proper attenuation.
I filled a 22oz cup with fresh-picked, dried spruce needles (new growth needles). During the boil, I filled a muslin grain bag with the full 22 ozs of needles and steeped like tea at the end of the boil. Several needles will slip out, but they float, so I scooped them up with a sanitized mesh hand strainer before transferring to carboy.
Ferment in primary for 3 weeks, then transfer to a secondary and add .75 ozs of Chinook for a dry hop addition. At this time, add 1 TBSP of cinnamon, 1 tsp of allspice, and 5 drops of vanilla extract into the secondary fermentor.
Let sit in secondary for 2 weeks, then cold crash (I just put mine outside overnight on a 30F night). Transfer to keg, pressurize, pour, and enjoy. |
