Notes: Double size (10 gal) version of my chocolate stout recipe.
Modified version of Rogue Chocolate Stout. Increased IBUs to be closer to the actual beer as the Zymurgy recipe incorrectly only has 40IBUs. Color was also very light, so increased roasted grains. The actual beer is 135L, so this is still pretty far off in color, but was shooting for a lighter / more chocolatey flavor. Added cocoa nibs to the end of the boil, need to determine if they are best served added to the secondary or to the end of boil. Chocolate extract is used in secondary to give strong chocolate aroma/flavor. I'm not sure about vanilla use, perhaps only a hint would be nice, but I may need to adjust to not overpower the beer. There is no vanilla in Rogue. |

Notes: 6/7/2016 used simpson golden promise, Malz pale wheat malt, and Briess Caravienne.
pH 5.2 in 5 Gallons of RO water at 165 for infusion mash.
Added brewing salts to the boil kettle approx. 7.5 gallons.
6.5 g of gypsum, 2g Calcium Chloride, 1.5 g Epsom Salt, 0.8 g NaCl.
3200 ml 1.040 starter for 24 hour with 2.5 month old yeast. Decant 50% since a low follucant yeast. went from 1.056 ( missed low on my numbers) to 1.014 in 48 hours. Conan/Pacman yeast is fast. But no blow-off. Kruszen was only 3" high. So different than WLP001. Which blows-off on me at 36 hour mark and ferments for 5 days.
Dry hopped 0n 6-17-16
Bottled on 6-21-16
Nice Dry Hop aroma
Taste was okay but needed more hop flavor
Next brew need to do longer hop stand or move some hops to the 10 and 5 min end of boil with some of the whirlpool hops
Taste is still drinkable 0n 09/20/16. Still big dry hop aroma. I surprised this has not dropped out yet. Taste is still okay yeast chalk bite flavor note has grown. Cant believe the long last hop aroma. Bright hop flavor just not strong enough flavor as in the nose.
Need to add only 5.5 gallons of brewing salts to boil. Might be a source of chalky taste |

Notes: Mash with 5 Gal at 153F for 1 hr, Place in Pot, cover with saran wrap on surface & purge with Co2 and tape lid shut and allow to cool to 110F, then innoculate Mash with 1 lb crushed raw 2-Row, stir, place saran wrap on surface of mash, purge with Co2 and tape lid shut and allow to sour. Use heat belt and blankets to heat at 105F to 110F for 24 hrs, (longer if u want more tart). Place mash in lauter tun and sparge with 6 gallons RO to collect 7.5 gallons, boil 2hrs til 5.5 gallons. Add brown sugar and 5gm Yeast Neut to boil. Use big starter of Roselare Blend (and lambic blend etc)or Use SA-5 for non Brett Brew. Ferment at 68-70F. Secondary then place 2 batches in 10 Gallon Rum Barrel x 6 to 12 months. When bottling with the Brett use 1/2 usual bottling sugar. SA-5 use standard bottling sugar amounts. |

Notes: This brew turned out great. I entered it into the 2014 California State Fair homebrew contest for some unbiased feedback. The feedback had to do with my brewing process more than the beer (watch fermentation temps, over carbonation). Judges commented that the beer had great body. Next time I will pay more attention to fermentation temp and I will dry hop more. Definitely brewing this again. |
