Notes: Mash at 150F. Kill the flame after the 90 min boil and add the Post Boil hops, swirl, cover and let sit for 60 min. After 60 min, drop the temp quickly, pitch and ferment at 70F for 17-21 days. Cold crash to 40F before racking to secondary. Rack to secondary, let the beer warm back to pitching temperature, and dry hop. I like to rack to a layer of CO2 covered hops (in this case, sack full of whole hops) in secondary. Add the corn sugar to a cup of water and boil for 5 minutes, chill and pitch when ready to bottle. Bottle at 70F

Beta gluc rest at 105F for 20-30 min. Sacch rest at 155F for 60 min. Boil. Add the 0 min hops, swirl and cover for 60 minutes. Drop the temp quickly, pitch and set to 69F for 10 to 14 days. Cold crash for 2 days to 37F and then bring back to 69F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 69F. |

Notes: You want a high CaCl for this style. My water goes like this, and should be a safe bet if you havent tested your water (per 5 gallons):

If the pH is too high, this usually means adding acid malt (~1% of the grist for every intended .1 drop)
If the pH is too low I add chalk (which should ideally be dissolved in carbonated water first) or baking soda (which can be added directly to the mash).
