Notes: The apple juice was made from apples picked in the backyard and processed with a juicer. I would probably use a press next time to prevent pulp from entering into the carboy. Or maybe filter the juice after processing.
The juice was heated to around 75°C for over 30 minutes. |

Notes: Original recipe uses 1 oz cascade @ 60 min instead of chinook. Chinook was added because I have a stockpile of it and it's only a bittering addition.
I thought my efficiency was wayyyy too high. It ended up being that I don't know how to use my new refractometer :( Added more hops to balance the (what I thought would be) high alcohol. This is an IPA now!

Notes: Full Bodied, mostly English style ale, with a moderate hop bitterness. Dark red in colour, the heavy maltiness is balanced by the soft bitterness of the Target hops, with a noticeable citrus flavor from the cascade hops on the finish. Quite alcoholic (my actual abv was 6.3%) so it gets the job done. |

Notes: I am a BIG fan of darker beers. I have also fallen in love with Nut Browns. So, I added the chocolate to this in hopes of imparting a dark color, a little more nuttiness, and caramel flavor. I added a few OZ of Smoked malt to add the "smoke" flavor that likely would have been present in a true "old world" nut brown. This is my very first and very experimental recipe. |

EKG Hops: (2.4 oz.) 2012 Fall harvest, 2 Yr Age. Low aroma
Ahtanum Hops: (2 oz.) 2013 Fall harvest 1 year age. Med. Low aroma
Coffee: med. dark,6 oz. soaked in 1.75 qt. 34 degree cold stored, 14 days. Cold pressed to remove grounds. Extracted 1 qt. Good flavor, no bitterness. Added day 3.
Cacao Nibs: Roasted 350 degrees 5 min, ground briefly in coffee grinder, added to 1 cup Johnny Walker Red whiskey, Brought to 1 min. boil, cooled and stored 4 days prior to addition at day 3 in fermenter.
Ahtanum Hops: Scheduled for day 3 in fermenter.
Fermentation: Oxygenated/agitated. 167 degrees start, ramp 1 degree a day to 170 starting day 3. 2 week total.
