Notes: Add ¾ teaspoon yeast energizer/nutrient mix immediately after pitching yeast.
Add ¾ teaspoon yeast energizer/nutrient mix 24 hours after fermentation begins.
Add ¾ teaspoon yeast energizer/nutrient mix 48 hours after fermentation begins.
Add ¾ teaspoon yeast energizer/nutrient mix after 30% of the sugar has been depleted.
Special Instructions / Notes:
Berries were frozen and then mostly thawed. I squished the bags of fruit to break them up a bit and used a large mouth funnel to get them into the carboy.
I did not heat the honey at all, just dumped right into carboy. I heated up some of the water I was using for top off and used that warm water to rinse the honey out of the jars and into the carboy. Used a paint stir bar on a drill to mix honey and water (and oxygenate). Added berries and gave a gentle stir to mix everything
Fermented at 68 degrees for three to four weeks with staggered nutrient additions
Cap management is important for releasing toxic CO2 and preventing temperature buildup below the cap. I swirled the carboy once in the morning and once in the evening for about 5 days to mix the fruit cap back down and release CO2
You will lose a lot of mead to the berries. I chilled the carboy down, racked to a secondary off the berries, chilled that carboy down, let set for a week or so, then kegged. This mead can plug a keg line easily if you're not careful.
Can taste a bit like children's cough syrup early on but eventually smoothes out, I haven't been able to keep any longer than a year before drinking it all. |

Notes: 1.25L starter. Pitch at 64F, keep cool for a couple of days then allow to ramp up on its own.
7 hour boil!
No water additions except lactic acid and Campden tablet - the minerals in the water will concentrate over the 7-hour boil, so I don't want to add anything extra.
Mash with 6 gallons, then boil for an hour before topping up with 1-2 gallons of separately boiled, filtered water to replace the boil-off. Keeping the overall boil volume lower should help to use less propane, and might increase the rate at which the wort changes.
Need to make sure that:
1) the volume never gets too low and allows the wort to scorch
2) the final volume is reasonably close to the target
3) the propane doesn't run out before the boil is done |

Notes: A beer inspired by Batch Brewing Co. Peaches and Cream Farmhouse & Viking Sweat (Bribie Gose Tropo - BGT). Using the same water chem. and most of the grist from 'Bribie Gose Tropo', and hops and peaches from Batch Brewing recipe.
Batch #1 - 16/12/18 (47% Eff.)
- Didn't add coriander seeds used in BGT, didn't want the pepper with the sweetness of the lactose and peaches.
- Cut back from 50g Hallertau Blanc to 30g and added 20g of Simcoe late (substituted for Amarillo as per Batch Brewing recipe.)
- Very low efficiency????
24/12/18 - SG:1022, tastes quite sweet still with a hint of milk from the lactose, added 6ml of lactic acid, let temp rise to 21C (maybe a bit late)
27/12/18 - SG: 1020, tasting slightly sour, the cream has died back a bit, added 1 (Goulburn Valley 700g Peaches in Juice), cold crashed.
31/12/18 - Kegged and carbed.
3/1/19 - Tastes mildly sweet, fruit flavour very mild, thin body. Came in very high, not sure why. Maybe up ferm temp next time. About to be left for two weeks, might add more fruit.
19/1/19 - Smoothed out with a thin body, mild sweetness and restrained peach flavour, could do with bit more fruit. Not bad.

Notes: Sugar is actually inverted local "raw sugar" from the company that supplies local breweries (a lot like turbinado for those who don't live in Aus.)
This is meant to be in the tradition of old commercial Aussie beers, which were actually originally ales, but the Nottingham imparts less ale characteristics and in fact if you ferment below 18C you are unlikely to find anyone who could pick this from a lager in a blind test
I have also used dry enzyme in my latest versions, hence the attenuation adjusted to 95%.
