Notes: Original batch is made at 4.5 gallons. After four days of fermenting, add honey to a gallon of water, raise to 178 for 60 minutes, then cool and add to wort.
Batch uses two packets of S-33 dry yeast. Another option is to use Wyeast Belgian Strong Ale yeast in a 2 liter starter. |

Notes: We have used new Crisp grains for this one. Also lot of stirring of the mash and mashed inside the pot. We also added 10ml of CRS which is a big difference from previous.
The temp of the water (i.e. inside the pot) after all mixing and ph testing, just before we left it for one hour was 69ish and the grains 65ish. Assuming the temp stayed in this range as it was insulated well.
Temp calibrated gravity reading was 1.048 which worked out to be around 70%.

Notes: Add Belgian Candi Syrup with 15min left in boil. Dextrose at 1min left.
Rack wort on top of sour blonde yeast cake (WLP800, santification, redemption bottle dregs). Primary ferment at 65F. Transfer to secondary and add cabernet soaked oak chips (1 oz) along with 25oz dried currants. Age for 9 months and try. |

Notes: 1. Mash all grains. Vorlauf
2. Sparge and rest for 10 min. Vorlauf
3. Boil Wort 90 min, hops 1, gypsum for 60 min.
4. 10 min add hops 2, whirlfloc tablet, yeast nutrient, wort chiller.
5. 10 min add hops 3 at 180 degF.
7. Cool wort to 55°F, add water to 5.5 gal if needed, aerate wort for 30 min, OG reading, and pitch yeast.
8. Ferment at 52°F till finished about 6 days.
9. Raise to 60°F over 2 days for 2-3 days.
10. Crash to 35 degF and lager for a month or two.

Notes: Inspired by Kraken Meadery's Loud Mouth Braggot by Steve Kirby. Orange blossom must and a saison wort, fermented by Belgian Saison III yeast. Used Sorachi Ace hops, orange peel and pepper. 12.3% ABV.
Mine:
1/4 tsp nutrient in the boil
then added 1/2 tsp nutrient when adding the honey. This gives total of 200 ppm (3.6g in 18L, 1/2 tsp=2.2g).
Did a 1.5L starter with the harvested yeast from my Angeleno Saison. |
