Notes: An English style barleywine with a German influence.
- Make a 2 liter 2-step starter culture of the yeast at least 48 hours prior to starting. Cold crash the first starter and decant after 24 hours. Then make the second step, cold crash and decant. Bring the yeast slurry up to room temperature before pitching.
- Ferment until final gravity is achieved
- Transfer to your secondary fermentation vessel
- Condition in the secondary for 1-2 months
- Bottle and allow to condition for 6-12 months |

Mesking på 66 grader i 60 min. Utmesk på 77 grader i 5 min hvis du har mulighet til å øke temperatur i mesken.
Kjøl ned til 17 grader før pitching av gjær.
Gjæring på 18 grader til stormgjæring begynner å avta (typisk etter 3-5 dager). Øk deretter til 20 grader og hold resten av gjæringsperioden (totalt 14 dager). Tørrhumle etter 5 dager.

Notes: Brewed 1/21/2016. Strike water was 166 and I hit about 151 so I recirculated about 2.5gal. Collected 9.5 gal and the sparge didn't drop below 3 brix. In kettle efficiency was 87%, didn't take a pH reading. Hit 5.75 pretty much on the nose but had a little left over. Hit my efficiency on the nose too. Pitching temp settled at about 68F. 1/22 temp has been about 67F all day. 1/23 temp had climbed up to 69F and I chilled it down to about 65F. 1/24 morning it was sitting at about 67F. Due to me leaving I put an airlock and some fermcap in there. Dry hopped 2/10/2016. Kegged 2/14/2016. |

Notes: Boil for 20 mins before first hop addition to get a good hot break.
Save about a liter of the original green beer when transferring to fermenter for use as gyle at the priming stage. Freeze until bottling day.
Transfer to secondary seven days after fermentation cools off and dry hop after 5 days....let hops sit for 5 days then cold crash for a day then bottle. |

"Well, from brewer to brewer and because you asked nicely, I'll at least help you in the right direction. Mostly Maris otter with a touch of a much richer malt for complexity, a couple different crystal malts, chocolate malt, a dash of EKG near the end of the boil, and British yeast. About 35 IBU, SRM in the low 20s, 1.060 OG. Hint: at least 2 malts are from Belgium"
Had a few grains left from previous batches, so above is what I had available without having to go out and purchase.
Brewed on 9/8/2013. Pitched with London Ale III Wyeast yeast that I created a starter from the day before, fermentation had just subsided when pitched. Brewed 5 gal, will brew another 5 gal next weekend. |

Notes: Dissolve the sugar in 2 gals. of juice at low boil then reduce heat and add 3 gals. cider and 5 tsp. yeast nutrient and steep at 180 for 30 mins.
Let cool, put in bucket, airate and pitch yeast.
Ferment at 65 for 7 days then transfer to secondary for 7 more days. |

Notes:
Strike with 10 gallons at 166 to hit 153. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 12 gallons at 165-170. Use a low attenuating yeast.
Pitch yeast at 50. Add 1vl for 2min of pure 02 prior to pitching. Ferment at 58. Raise to 65 degrees after a few days to clear diacytle.
