Notes: Used whole leaf Amarilo hops in boil. OG was low 1.055 vs 1.078?? Added water to mash due to temperature was 148 vs 152. Reduced Sparge water to compensate. Collected about 5.5-6 gallons wert.
Dry hopped on 2/26/12 with a total of 2.23 oz of Citra/Centenial/Columbus/Amarilo hops and left it in primary due to travel. Some activity still present.
Kegged on 3/7/2012 - Great hop citrus aroma and taste. nice body and sweetness of a red ale. There was about half to 3/4 of a gallon extra left after filling 5 gal keg. |

- de 44 a 55ºC: acontece a Peptidase, quando há a produção e extração do amido do malte de cevada.
- 45 a 55ºC: também é o intervalo quando acontece a Protease, que é a quebra do amido (proteínas grandes) em açúcares menores. Conhecido como “repouso proteico”, quando acontece a primeira sacarificação.

Notes: Added Canned pumpkin directly to mash. It was not as hard to run off as I had anticipated. I used some tips for the pumpkin addition and spice that I found online from craft brewers. It was advised to use canned pumpkin at 25% of your amount of grain. Hence the approx. 4 pounds.
I have never used cluster hops before so I'm not sure what to expect. I had an ounce sitting around and it gave me the low bitterness I was looking for. My garage smelled like I was making pumpkin pie so I am interested to see how this turns out. |

pre fermentation pH 5.13 after 5 cc or so of lactic acid
was supposed to be dry hopped w/ 2 oz of simcoe and 2 oz of citra.... but hop flavor and aroma was too pungent and adding dry hop would have overwhelmed pilsner aspect and pushed straight into pale ale territory
overall it was good. incredibly fruity, but didn't at all resemble a west coast pils or really a pils... it was fuller body more like a pale ale |
