Notes: No Chill- Started a yeast starter day before and pitched 1-11-14 of 1 gal starter. 2-1-14 Added zest and guts of 3 blood oranges ( no pith ) 1/2 oz dried sweet orange zest. 2-17-14 Kegged with Gyle of 1.5 qts of original wort and pitched with slurry of Strand Brewing orange wit from bottle. 3-1-14 Tapped and tasted - Gyle worked great and tasted flavorful not sweet. Carbed @ 10 psi CO2. Will wait for it to chill down and enjoy.
3-3-14 - Cleared amazingly well. So good after it chilled down. Wish the weather was warmer for this bad ass beer. Had a New Belgium SnapShot wheat today and this was WAY better. 1st few pints were cloudy and bits of coriander, but none now. Gets better daily. |

Step by Step
Mill the grains and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 154 °F (68 °C). Hold the mash at 154 °F (68 °C) until enzymatic conversion is complete. Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.040 (9.9°P).
Total wort boil time is 90 minutes. Add the bittering hops with 60 minutes remaining in the boil. Add Irish moss or other kettle finings with 15 minutes left. Add other hop additions at 10 minutes remaining and flame out. Chill the wort to 67 °F (19 °C) and aerate thoroughly. The proper pitch rate is 9 grams of rehydrated dry yeast, 2 packages of liquid yeast or 1 package of liquid yeast in a 1.5-liter starter.
Ferment at 67 °F (19 °C) until the yeast drops clear. Fermentation should be complete in about one week. Allow the lees to settle and the brew to mature without pressure for another two days after fermentation appears finished. Rack to a keg and force carbonate or rack to a bottling bucket, add priming sugar, and bottle. Target a carbonation level of 2 to 2.5 volumes. |

Notes: This Dogfish Head 90 Minute IPA Clone is created with a single infusion mash at 150°F (66°C) for 60 minutes.
Boil for 90 minutes. Combine all of your kettle hops into one bowl, weigh out 0.2 ounces (5.6 grams) of the hop mixture and add to the boil every five minutes for the duration of the boil.
Ferment at 72°F (22°C) until gravity reaches terminal. Rack into secondary and add dry hops for at least one week. Package and serve. |

*NOTE*
Should read 5 days for the fruit in the secondary, not 5 minutes. I just couldn't find where to change it to days.
Original recipe calls for 6.5 pounds of DME, I upped how much I wanted to raise the ABV. I also modified the attenuation to try and raise the ABV, I'll make sure to note what I actually get. |

Notes: 1. Fill your kettle with 3 gallons of water and turn on heat
2. When the water is hot, before it boils, carefully add your Dry Malt Extract (DME), stirring to avoid clumps. You liquid in your kettle is now wort (malt liquid).
3. Bring your wort to a boil
4. When the wort is at full boil, add 2 oz. Hallertau hops to the boil and start a 60 minute timer
5. Turn off heat. Cool wort by placing kettle in an ice bath in your sink.
6. When it reaches about room temperature, rack your wort into your fermentation vessel.
7. Top off the your fermentation vessel with cool water to reach 5 gallons of wort.
8. Use your hydrometer to find your original gravity and record
9. Pitch your yeast and place airlock (and lid) on your fermentation vessel.
10. When visible signs of fermentation have disappeared for several days, at least 14 days, rack your beer into your bottling bucket.
11. Add 5 oz priming sugar to 1 cup water and bring to a simmer. Allow to cool some, then add to bottling bucket. Stir gently with sanitized bottling wand.
12. Fill bottles and cap.
13. Store bottles at room temperature for 14 days.
14. Refrigerate overnight
