| Notes: Pitch the yeast at 65 degrees, then let it cool down to 60 degrees. Keep it fermenting at 60 degrees for 7 days before raising the temperature to 65. Let it continue fermentation at 65 degrees for another 24 hours. Rack into a secondary fermentation vessel and store as close to 35 degree as you can get for another 3-4 weeks. |
