Notes: Instructions
Mix the honey with some warm water. Then mix in water more water for a total volume of about 15 liters. (or as much as you wish to achieve a certain OG).
Add the dry yeast. If you want to give the yeast an extra boost, it can be rehydrated with the addition of 1 gram of Go-Ferm per gram of dry yeast.
Ferment at about 17 - 18 °C.
Fermentation
Day 1 (one day into the fermentation)
Gently stir with a sanitized spoon or wine whip to degass the mead. Add 2,5 grams of Fermaid K and 1 grams of DAP.
Day 2
Gently stir with a sanitized spoon or wine whip to degass the mead.
Day 3
Gently stir with a sanitized spoon or wine whip to degass the mead. Add 2,5 grams of Fermaid K and 1 grams of DAP.
Day 4
Gently stir with a sanitized spoon or wine whip to degass the mead.
Day 6
Gently stir with a sanitized spoon or wine whip to degass the mead. Add 2,5 grams of Fermaid K and 1 grams of DAP.
After 3-4 weeks
Rack the mead into a secondary fermentation vessel, such as a PET carboy. The fermenter should be as small as possible to reduce the size of the air pocket. Put the fermenter in a cold, dark place so that it clears faster.
Bottle when the mead has cleared, or when it seems ready. Still mead is the most common. For this we recommend wine bottles and corks.
If you prefer a carbonated mead, you need to add priming sugar before bottling. For this we recommend champagne or beer bottles. |

Notes: Swapped the Chocolate Malt for Coffee Malt just to see what would happen.
Double Mash as my Mashtun only holds about 15 pounds of grain. Once the first mash is done, drain off the wort and soak that in 3 gallons of water in a SS pot. Then clean out the mash tun and fill it with another 5 gallons of water and proceed with mashing the second 15 pounds of grain.
Made 3.5 liter starter of a-10 darkness
Primary will be about 2 weeks and secondary will be about 2 months with home made toasted whiskey chips.
Bottle with no more than about 3.5 or 4 ounces of cane sugar.
Takes about 3 or 4 months before they are actually drinkable. Best after about 1 year.

Notes: DIRECTIONS
Do a single-infusion mash at 149°F (65°C) for 75 minutes. Raise the temperature to 168°F (76°C) for mash-out; lauter and sparge to get about 6.8 gallons (25.7 l) of wort. Boil for 90 minutes and whirlpool, following the hops & additions schedule. Chill to about 68°F (20°C), aerate the wort, and pitch the yeast. Ferment at 68°F (20°C). When fermentation is complete, add the spices to a small amount of 195°F (91°C) water to sanitize and add to the beer before packaging or wood-aging.
BREWER’S NOTES
Try aging the beer with oak cubes that have soaked in whiskey combined with honey or maple syrup to approximate Odd Side’s barrel-aged version of the beer. |

Notes: Mash and collect 7,5 gallons in the kettle. Boil 10 min to sanitize. Cover and let cool or chill to ~100F. Sparge with CO2 and pitch lacto. Use heating mantle to hold 85 to 90. Monitor pH until it hits 3.5.

Ferment at 1056 temperature 1 week. rack onto 4 lb frozen raspberries (thaw first). Ferment another week. Transfer to keg and carb. |
