Do this during the boil…before you’ve had any beer to drink.
Place 2lb table sugar in a dry pot, preferably on an outside burner as it will smoke…A LOT!
Crank heat up to high and walk away. Do not add water. After about 5 minutes the sugar will smoke and liquify at the bottom. Stir carefully as it will reach temps of 400-450F during the process.
Continue high heat until all the sugar is melted and small bubbles are forming at the top but not a rolling boil. You can very easily reach the point of no return and it will completely empty the pot onto the ground like a volcano.
It should look like your favorite American Imperial Stout at this point. Very dark with very fine bubbles on top.
Turn off heat and VERY CAREFULLY adding two cups cold water at a time, stirring between each addition until you’ve added a total 6 cups.
Wear heavy gloves and an apron as it will spit and sputter 400F molten sugar at you but the end product will be worth the effort.
What you’ve made is “Spanish Liquor”. Burnt sugar syrup and it’s glorious!
“Dark Candi Sugar” just won’t cut it, plus this is far less expensive.
Add the Spanish Liquor to the boil along with any remaining solids as they will dissolve. |

| Notes: Start at 65 or 66degF. Let it free rise to 72 or 75degF. Let it sit for 2 weeks. First time I made this, I overboiled and started at 1.109, made it rise to slowly (was 1degF every 12 hours and stopped it at 72), stopped fermentation after 7 days (FG reading at this time was 1.020; this yeast probably needed some more time), and bottle conditioned with target 2.75volCO2. They were all gushers, but not bottles were harmed during conditioning of this beer. I used Harris Teeter spring water with no additions. Received an honorable mention in a local HB comp. Hops AA was low. Simply kept recipe at 1oz of hops and adjusted first and late additions such that I hit IBU in the 20s. |

Notes: 6 MARS 2019:
L'infusion n'a pas très bien réussie malgré 75 minutes de temps. Le goût n'était pas très sucré. Peut-être étais-ce mon thermomètre à cuisson (dont la tige était tordu) qui m'a fait faux bond!?!
La première semaine, le goût très astringent de la cardamome était présent et donnait au moût un très longue persistance en bouche. Lors du transfert en tourie, le goût était plus équilibré.
-5 graines de cardamome ont bouillis pendant 8 min en même temps que le Santiam et l'infusion ajoutée au moût.
Également, c'est grain canadien Pilsner et non de l'américain que j'ai utilisé.
Ma densité était de 1,060 soit près de 6,57 % ABV.
15 MARS: soutirage et ajout de houblon Santiam (20 g) dans la tourie (houblonnage à crû). La tourie est pleine à 95% (3 po du goulot). Dans les jours qui suivent la bière s'affine et le goût de cardamome diminue. La bière révèle parallèlement des odeurs fruités.
-24 mars: embouteillage: 19 litres dont 1 de perdu à cause d'un mauvais soutirage. j'ajoute à la bière1 c. à soupe de houblon Greeen Bullets préalablement infusé 2 min dans 2 tasses d'eau.
140 g de Dextrose ajouté à la bière pour refermentation.
8 gallons d'eau de source Labrador a été utilisé. Le reste étant de l'eau chaude du robinet et de l'eau bouillis la veille (8 litres). |
