Notes
Influenced from Vietnamese Bia Hoi, using wild rice that is available on hand. However, there is certainly nothing traditional about this beer. We use hand selected Vietnamese 'Golden Rice' grown only 3 months out of the year in the famous Sa Pa highlands. This beer takes a creative approach by using mixed culture yeast & bacteria, to allow for a stone-fruit driven flavor profile, lactic tartness, and a dry finish.
